Fluffy Coffee Muffins

Ingredients

Makes about 14 Muffin cup size φ4.5cm H2.5cm

  • 1 Egg 60g (room temperature)
  • 60g Granulated sugar
  • 100g Heavy Cream(43%fat)
  • 30g Almond flour
  • 80g Flour
  • 2g Baking powder
  • 4g Instant coffee (espresso)
  • 2.5g Hot water

For Topping:

  • 6g Sliced almonds

Directions

Preparation: Preheat oven to 338 °F/170℃.
Line muffin mold with glassine paper.
①Add hot water to the coffee and mix well.
②Crack the eggs into a bowl and mix well.
③Add sugar, almond flour, heavy cream in that order and mix well.
④Sift flour,baking powder over the batter and mix.
⑤Transfer 70 g of batter to another bowl, add coffee and mix.
⑥Transfer the batter to the piping bag, pipe it into each cup.
(Alternately put each batter into the muffin tin. )
⑦Mix the batter lightly with chopsticks.
Top with sliced almonds.
⑧Bake it at 338 °F/170℃ for 16 mins.It's all done!
*When the heat went away, put it in a plastic bag or plastic container.
