Veg Railway Cutlet

Veg Railway Cutlet is a popular vegetarian snack in India, especially among train travelers. It is a flavorful and crispy cutlet made with mashed vegetables and spices.

Ingredients:

  • 2 cups boiled and mashed potatoes
  • 1/2 cup grated carrot
  • 1/2 cup finely chopped beans
  • 1/4 cup peas (fresh or frozen)
  • 1/4 cup finely chopped capsicum (bell pepper)
  • 1 small onion, finely chopped
  • 2 green chilies, finely chopped
  • 1/2 teaspoon ginger paste
  • 1/2 teaspoon garlic paste
  • 1/2 teaspoon cumin seeds
  • 1/2 teaspoon garam masala
  • 1/2 teaspoon turmeric powder
  • 1/2 teaspoon red chili powder (adjust according to your spice preference)
  • 1 tablespoon chopped coriander leaves
  • 1 tablespoon lemon juice
  • Bread crumbs for coating
  • Oil for shallow frying
  • Salt to taste

Instructions:

  1. Heat a tablespoon of oil in a pan over medium heat. Add cumin seeds and let them splutter.
  2. Add chopped onions and sauté until they turn translucent.
  3. Add ginger paste, garlic paste, and green chilies. Sauté for a minute until the raw aroma disappears.
  4. Add grated carrot, chopped beans, and peas. Cook for 3-4 minutes until the vegetables are slightly tender.
  5. Add capsicum and cook for another 2 minutes. Ensure that the vegetables retain their crunch.
  6. Now add turmeric powder, red chili powder, and garam masala. Mix well and cook for a minute to allow the spices to blend with the vegetables.
  7. Turn off the heat and let the vegetable mixture cool down.
  8. In a large mixing bowl, combine the mashed potatoes, cooked vegetables, chopped coriander leaves, lemon juice, and salt. Mix well to form a uniform mixture.
  9. Divide the mixture into equal-sized portions and shape them into flat cutlets or patties.
  10. Coat each cutlet with bread crumbs on all sides. You can press the bread crumbs gently to ensure they stick well.
  11. Heat oil in a shallow pan or tawa over medium heat.
  12. Place the coated cutlets on the pan and shallow fry them until golden brown and crispy on both sides. Flip the cutlets carefully to avoid breaking them.
  13. Once cooked, remove the cutlets from the pan and drain excess oil on a kitchen towel.
  14. Serve the Veg Railway Cutlets hot with tomato ketchup, green chutney, or any dip of your choice.
