Ingredients:

  • 1 jar of dill pickle chips
  • 1/2 cup all-purpose flour
  • 1 teaspoon garlic powder
  • 1 teaspoon paprika
  • 1/2 teaspoon cayenne pepper (optional)
  • 1/2 teaspoon salt
  • 1/2 teaspoon black pepper
  • 2 eggs
  • 1/4 cup milk
  • 1 cup Panko bread crumbs
  • 1/2 cup grated Parmesan cheese
  • Vegetable oil, for frying

Instructions:

  1. Drain the pickle chips and pat them dry with paper towels.
  2. In a shallow dish, mix together the flour, garlic powder, paprika, cayenne pepper (if using), salt, and black pepper.
  3. In another shallow dish, whisk together the eggs and milk.
  4. In a third shallow dish, mix together the Panko bread crumbs and grated Parmesan cheese.
  5. Dip each pickle chip into the flour mixture, shaking off any excess. Then dip it into the egg mixture, and finally coat it in the Panko-Parmesan mixture. Place the coated pickle chips on a baking sheet lined with parchment paper.
  6. Heat about 1 inch of vegetable oil in a deep skillet or Dutch oven over medium-high heat until it reaches 350°F.
  7. Fry the pickle chips in batches until golden brown and crispy, about 2-3 minutes per batch. Use a slotted spoon or tongs to transfer the fried pickles to a paper towel-lined plate to drain any excess oil.
  8. Serve the fried pickles immediately while they're still hot and crispy.
