Ingredients

Puran poli

For dough:

  • Wheat flour - 1 cup
  • All purpose flour - 1 cup
  • Turmeric powder - 1/4 tsp
  • Salt -1/2 tsp
  • Water

For Puran:

  • Chana dal -1 cup
  • Jaggery (gud)- 3/4 cup
  • Cooking oil - 1 tsp
  • Cardamom powder -1/2 tsp
  • Nutmeg powder -1/2 tsp (optional)

For Aamti:

  • Boiled dal stock or normal water
  • Dry coconut -1/4 cup
  • Onion -2
  • Coriander leaves -1/3 cup
  • Ginger - 2 inch
  • Garlic cloves -10
  • Mustard seeds - 1 tsp
  • Cumin seeds - 1 tsp
  • Bay leave - 1
  • Turmeric whole - 1 (small)
  • Star anise -1
  • Mace - 1/2
  • Cinnamon stick -1/2 inch
  • Coriander seeds - 1 tbsp
  • Fenugreek seeds -1/2 tsp
  • Chana Dal - 1 tbsp
  • Curry leaves as per your taste
  • Turmeric powder -1/2 tsp
  • Red chilli powder -2 tsp
  • Coriander leaves
  • Cooking oil - 4 tbsp
  • Salt to taste
  • Aloo bhaji:
  • Boiled potatoes - 4
  • Mustard seeds -
  • Green chilli - 2
  • Garlic chopped - 1 tsp
  • Turmerics powder -1/2 tsp
  • Salt to taste
  • Cooking oil - 3 tbsp
  • Coriander leaves - 4 tbsp
