Chicken Chopsuey

Chicken Chopsuey is a popular Chinese-inspired stir-fry dish that typically consists of a colorful mix of vegetables, chicken, and a flavorful sauce. It's a versatile and healthy dish that can be served with steamed rice or noodles. Here's a recipe for Chicken Chopsuey:
Ingredients:
- 2 boneless, skinless chicken breasts, thinly sliced
- 2 tablespoons vegetable oil
- 2 cloves garlic, minced
- 1 small onion, thinly sliced
- 1 medium carrot, julienned
- 1 bell pepper (any color), thinly sliced
- 1 cup cabbage, thinly sliced
- 1 cup broccoli florets
- 1 cup snow peas
- 1 cup bean sprouts
- 2 tablespoons soy sauce
- 1 tablespoon oyster sauce
- 1 teaspoon cornstarch, dissolved in 2 tablespoons water
- Salt and pepper to taste
- Optional: chopped green onions for garnish
Instructions:
- In a large wok or skillet, heat the vegetable oil over medium-high heat.
- Add the minced garlic and sliced onions to the pan and stir-fry for about a minute until fragrant and lightly golden.
- Add the sliced chicken to the pan and stir-fry until it's cooked through and no longer pink. Season with salt and pepper to taste.
- Push the chicken to one side of the pan and add the julienned carrot, sliced bell pepper, cabbage, broccoli florets, and snow peas to the other side. Stir-fry the vegetables for a few minutes until they are crisp-tender.
- Add the bean sprouts to the pan and stir-fry for another minute.
- In a small bowl, whisk together the soy sauce and oyster sauce. Pour the sauce over the chicken and vegetables in the pan and stir well to combine.
- Stir the cornstarch mixture to ensure it is well dissolved, then add it to the pan. Stir-fry for another minute or two until the sauce thickens and coats the ingredients.
- Taste the chicken chopsuey and adjust the seasoning if needed with additional salt and pepper or more soy sauce.
- Remove from heat and garnish with chopped green onions, if desired.
- Serve the chicken chopsuey hot over steamed rice or noodles.
