Raspberry Swirl Ice Cream

Raspberry swirl ice cream is a delightful and refreshing treat, combining the creamy goodness of ice cream with the tangy sweetness of raspberries.

Ingredients:

  • 2 cups fresh or frozen raspberries
  • 1/2 cup granulated sugar
  • 2 tablespoons lemon juice
  • 2 cups heavy cream
  • 1 cup whole milk
  • 3/4 cup granulated sugar
  • 1 teaspoon vanilla extract

Instructions:

  1. In a small saucepan, combine the raspberries, 1/2 cup of granulated sugar, and lemon juice. Cook over medium heat, stirring occasionally, until the raspberries break down and release their juices. This should take about 5-7 minutes.
  2. Once the raspberries have cooked down, remove the saucepan from the heat and strain the mixture through a fine-mesh sieve to remove the seeds. Use a spatula or the back of a spoon to press the mixture through the sieve, extracting as much raspberry puree as possible. Discard the seeds and set the raspberry puree aside to cool.
  3. In a separate bowl, whisk together the heavy cream, milk, remaining 3/4 cup of granulated sugar, and vanilla extract until the sugar has dissolved and the mixture is well combined.
  4. Pour the cream mixture into an ice cream maker and churn according to the manufacturer's instructions. This usually takes around 20-25 minutes, but refer to your specific machine for accurate timing.
  5. While the ice cream is churning, place a container in the freezer to chill.
  6. Once the ice cream has reached a soft-serve consistency, drizzle about half of the raspberry puree over the churning ice cream. Use a spoon or spatula to gently swirl the raspberry puree into the ice cream, creating a marbled effect.
  7. Transfer the partially swirled ice cream into the chilled container from the freezer. Drizzle the remaining raspberry puree over the ice cream and gently swirl it again to create more swirls.
  8. Place the container in the freezer and let the ice cream freeze until firm, usually for about 4-6 hours or overnight.
  9. Once the ice cream has completely frozen, it is ready to be served! Scoop the raspberry swirl ice cream into bowls or cones and enjoy the delightful blend of creamy ice cream and tangy raspberry swirls.
