Ingredients

For Gravy

  • 2-3 tbsp Oil, рддреЗрд▓

  • 6-7 no. Black peppercorns, рдХрд╛рд▓реА рдорд┐рд░реНрдЪ рдХреЗ рджрд╛рдиреЗ
  • ┬╝ tsp Asafoetida, рд╣реАрдВрдЧ
  • Prepared Ginger Green chili paste, рддрдпрд╛рд░ рдХрд┐рдпрд╛ рд╣реБрдЖ рдЕрджрд░рдХ рд╣рд░реА рдорд┐рд░реНрдЪ рдХрд╛ рдкреЗрд╕реНрдЯ
  • 3-4 no. large Tomatoes, roughly diced, рдЯрдорд╛рдЯрд░
  • 1 ┬╜ tsp Degi red chili powder, рджреЗрдЧреА рд▓рд╛рд▓ рдорд┐рд░реНрдЪ рдкрд╛рдЙрдбрд░
  • ┬╝ tsp Turmeric powder, рд╣рд▓реНрджреА рдкрд╛рдЙрдбрд░
  • 1 heaped tbsp Coriander powder, рдзрдирд┐рдпрд╛ рдкрд╛рдЙрдбрд░
  • 10-12 no. Almonds (optional) рдмрд╛рджрд╛рдо
  • 1 cup Curd, beaten, рджрд╣реА
  • 1 ┬╜ cups Water, рдкрд╛рдиреА
  • 1 tbsp Tender Coriander stems, finely chopped, рдзрдирд┐рдпреЗ рдХрд╛ рдбрдВрдард▓
  • Salt to taste, рдирдордХ рд╕реНрд╡рд╛рджрдЕрдиреБрд╕рд╛рд░
  • ┬╝ tsp Sugar, рдЪреАрдиреА
  • ┬╝ cup Water, рдкрд╛рдиреА
  • Fried paneer, рддрд▓рд╛ рд╣реБрдЖ рдкрдиреАрд░

For Ginger Green Chili Paste

  • 1 ┬╜ inch Ginger (peeled & roughly chopped) рдЕрджрд░рдХ
  • 3 no. Green chillies (less spicy & roughly torn) рд╣рд░реА рдорд┐рд░реНрдЪ
  • Salt to taste, рдирдордХ рд╕реНрд╡рд╛рджрдЕрдиреБрд╕рд╛рд░

For Masala

  • Salt to taste, рдирдордХ рд╕реНрд╡рд╛рджрдЕрдиреБрд╕рд╛рд░
  • 1 tbsp Black peppercorns, рдХрд╛рд▓реА рдорд┐рд░реНрдЪ рдХреЗ рджрд╛рдиреЗ
  • 10-12 no. Green cardamom, рд╣рд░реА рдЗрд▓рд╛рдпрдЪреА
  • 1 tbsp dry Fenugreek leaves, рдХрд╕реВрд░реА рдореЗрдереА

For Frying Paneer

  • 1 tbsp Oil, рддреЗрд▓
  • ┬╜ tbsp Ghee, рдШреА
  • 400 gms Paneer, cut diagonally, рдкрдиреАрд░
  • Salt to taste, рдирдордХ рд╕реНрд╡рд╛рджрдЕрдиреБрд╕рд╛рд░
  • 1 tsp Degi red chili powder, рджреЗрдЧреА рд▓рд╛рд▓ рдорд┐рд░реНрдЪ рдкрд╛рдЙрдбрд░

For Smoke

  • Coal, рдХреЛрдпрд▓рд╛
  • 2-3 no. Green cardamom, рд╣рд░реА рдЗрд▓рд╛рдпрдЪреА
  • 1 tsp Ghee, рдШреА

For Garnish

  • Coriander sprig, рдзрдирд┐рдпрд╛ рдкрддреНрддрд╛
  • ┬╝ tsp Prepared Masala, рддрдпрд╛рд░ рдХрд┐рдпрд╛ рд╣реБрдЖ рдорд╕рд╛рд▓рд╛

Process

For Gravy

  1. In a handi, add oil, once it's hot, add cloves, black peppercorns and let it splutter.
  2. Add asafoetida, prepared ginger green chili paste and saut├й it for 2-3 minutes.
  3. Add tomatoes, degi red chili powder, turmeric powder, coriander powder and cook it for a while.
  4. Add almonds, curd and cook for 5-6 minutes on high flame.
  5. Add water, coriander stems, salt to taste, sugar, cover it with a lid and cook it for 8-10 minutes on medium flame until cooked well.
  6. Grind the gravy to a smooth paste with the help of a hand blender, add water and simmer it for a while.
  7. Add prepared fried paneer and let it cook for 2-3 minutes.
  8. Place the coal in a small bowl, add green cardamom, ghee and cover it with a lid. Keep it aside for 4-5 minutes.
  9. Tansfer it to a serving dish, garnish it with coriander sprig and sprinkle prepared masala.
  10. Serve hot with roti.

For Ginger Green Chili Paste

  1. In a mortar pestle, add ginger, green chillies, salt to taste and grind it coarsely.
  2. Keep it aside for further use.

For Masala

  1. In a pan, add salt to taste, black peppercorns, green cardamom and dry roast it for a while.
  2. Add dry fenugreek leaves and toss well.
  3. Transfer it to a mixer grinder jar and grind it to a fine powder.
  4. Keep it aside for further use.

For Smoke

  1. Place the coal on a gas range and let it burn on high flame.
  2. Place it into a small steel bowl and keep it aside for further use.
