Swedish Apple Cake
Swedish Apple Cake, also known as Äppelkaka, is a delightful dessert that features the delicious flavors of apples, cinnamon, and sometimes vanilla.
Ingredients:
- 4-5 medium-sized apples (peeled, cored, and sliced)
- 1 tablespoon lemon juice
- 1 teaspoon ground cinnamon
- 2 cups all-purpose flour
- 2 teaspoons baking powder
- 1/2 teaspoon salt
- 1 cup unsalted butter, softened
- 1 cup granulated sugar
- 3 large eggs
- 1 teaspoon vanilla extract
- 1/2 cup milk
Instructions:
- Preheat your oven to 350°F (175°C). Grease and flour a 9-inch (23 cm) springform pan.
- In a bowl, toss the sliced apples with lemon juice and ground cinnamon. Set aside.
- In another bowl, whisk together the flour, baking powder, and salt. Set aside.
- In a large mixing bowl, cream together the softened butter and sugar until light and fluffy.
- Add the eggs one at a time, beating well after each addition. Stir in the vanilla extract.
- Gradually add the dry ingredients to the wet ingredients, alternating with the milk. Begin and end with the dry ingredients. Mix until just combined.
- Spread about half of the batter into the prepared springform pan.
- Arrange half of the apple slices over the batter.
- Repeat with the remaining batter and apple slices.
- Bake in the preheated oven for approximately 45-55 minutes or until a toothpick inserted into the center comes out clean.
- Allow the cake to cool in the pan for about 15 minutes, then transfer it to a wire rack to cool completely.
- Optional: Dust the cooled cake with powdered sugar before serving.
