Swedish Apple Cake

Swedish Apple Cake, also known as Äppelkaka, is a delightful dessert that features the delicious flavors of apples, cinnamon, and sometimes vanilla.

Ingredients:

  • 4-5 medium-sized apples (peeled, cored, and sliced)
  • 1 tablespoon lemon juice
  • 1 teaspoon ground cinnamon
  • 2 cups all-purpose flour
  • 2 teaspoons baking powder
  • 1/2 teaspoon salt
  • 1 cup unsalted butter, softened
  • 1 cup granulated sugar
  • 3 large eggs
  • 1 teaspoon vanilla extract
  • 1/2 cup milk

Instructions:

  1. Preheat your oven to 350°F (175°C). Grease and flour a 9-inch (23 cm) springform pan.
  2. In a bowl, toss the sliced apples with lemon juice and ground cinnamon. Set aside.
  3. In another bowl, whisk together the flour, baking powder, and salt. Set aside.
  4. In a large mixing bowl, cream together the softened butter and sugar until light and fluffy.
  5. Add the eggs one at a time, beating well after each addition. Stir in the vanilla extract.
  6. Gradually add the dry ingredients to the wet ingredients, alternating with the milk. Begin and end with the dry ingredients. Mix until just combined.
  7. Spread about half of the batter into the prepared springform pan.
  8. Arrange half of the apple slices over the batter.
  9. Repeat with the remaining batter and apple slices.
  10. Bake in the preheated oven for approximately 45-55 minutes or until a toothpick inserted into the center comes out clean.
  11. Allow the cake to cool in the pan for about 15 minutes, then transfer it to a wire rack to cool completely.
  12. Optional: Dust the cooled cake with powdered sugar before serving.
