Chinese Fried Rice

Enjoy your homemade Chinese Fried Rice

Ingredients:

  • 3 cups cooked jasmine rice (preferably day-old and chilled)
  • 2 tablespoons vegetable oil
  • 2 eggs, lightly beaten
  • 1 cup mixed vegetables (peas, carrots, corn, and/or diced bell peppers)
  • 1/2 cup diced cooked chicken, shrimp, or tofu (optional)
  • 3 green onions, thinly sliced
  • 3 tablespoons soy sauce
  • 1 tablespoon oyster sauce (optional)
  • 1 teaspoon sesame oil
  • 1/2 teaspoon ground white pepper
  • Salt to taste
  • Fresh cilantro or chopped green onions for garnish (optional)

Instructions:

  1. Prep Ingredients:
    • Ensure all your ingredients are chopped and ready before you start cooking.
  2. Scramble Eggs:
    • Heat 1 tablespoon of vegetable oil in a large wok or skillet over medium-high heat. Pour in the beaten eggs and scramble until just cooked. Remove the eggs from the wok and set aside.
  3. Stir-Fry Vegetables:
    • In the same wok, add the remaining 1 tablespoon of oil. Add the mixed vegetables and stir-fry for 2-3 minutes until they are slightly tender.
  4. Add Protein (Optional):
    • If you're using chicken, shrimp, or tofu, add it to the wok and cook until heated through.
  5. Add Rice:
    • Add the chilled, cooked rice to the wok. Break up any clumps and stir-fry for a few minutes until the rice is heated.
  6. Season the Fried Rice:
    • Pour soy sauce, oyster sauce (if using), and sesame oil over the rice. Add ground white pepper. Mix well to ensure the rice is evenly coated.
  7. Incorporate Eggs:
    • Add the scrambled eggs back into the wok, mixing them evenly with the rice and vegetables.
  8. Adjust Seasoning:
    • Taste the fried rice and adjust the seasoning with salt or additional soy sauce if needed.
  9. Garnish and Serve:
    • Stir in sliced green onions. Garnish with fresh cilantro or additional chopped green onions if desired.
