Chinese Fried Rice

Enjoy your homemade Chinese Fried Rice
Ingredients:
- 3 cups cooked jasmine rice (preferably day-old and chilled)
- 2 tablespoons vegetable oil
- 2 eggs, lightly beaten
- 1 cup mixed vegetables (peas, carrots, corn, and/or diced bell peppers)
- 1/2 cup diced cooked chicken, shrimp, or tofu (optional)
- 3 green onions, thinly sliced
- 3 tablespoons soy sauce
- 1 tablespoon oyster sauce (optional)
- 1 teaspoon sesame oil
- 1/2 teaspoon ground white pepper
- Salt to taste
- Fresh cilantro or chopped green onions for garnish (optional)
Instructions:
- Prep Ingredients:
- Ensure all your ingredients are chopped and ready before you start cooking.
- Scramble Eggs:
- Heat 1 tablespoon of vegetable oil in a large wok or skillet over medium-high heat. Pour in the beaten eggs and scramble until just cooked. Remove the eggs from the wok and set aside.
- Stir-Fry Vegetables:
- In the same wok, add the remaining 1 tablespoon of oil. Add the mixed vegetables and stir-fry for 2-3 minutes until they are slightly tender.
- Add Protein (Optional):
- If you're using chicken, shrimp, or tofu, add it to the wok and cook until heated through.
- Add Rice:
- Add the chilled, cooked rice to the wok. Break up any clumps and stir-fry for a few minutes until the rice is heated.
- Season the Fried Rice:
- Pour soy sauce, oyster sauce (if using), and sesame oil over the rice. Add ground white pepper. Mix well to ensure the rice is evenly coated.
- Incorporate Eggs:
- Add the scrambled eggs back into the wok, mixing them evenly with the rice and vegetables.
- Adjust Seasoning:
- Taste the fried rice and adjust the seasoning with salt or additional soy sauce if needed.
- Garnish and Serve:
- Stir in sliced green onions. Garnish with fresh cilantro or additional chopped green onions if desired.
