Perfect Coffee Cookies

Ingredients:
- 1 cup unsalted butter, softened
- 1 cup granulated sugar
- 2 cups all-purpose flour
- 2 tablespoons ground coffee or instant coffee granules (adjust to taste)
- 1 teaspoon vanilla extract
- 1/4 teaspoon salt
- Optional: Coffee beans or additional coffee grounds for decoration
Steps:
- Preheat your oven to 350°F (175°C). Line baking sheets with parchment paper.
- In a large mixing bowl, cream together the softened butter and granulated sugar until light and fluffy.
- Add the vanilla extract and mix until well combined.
- In a separate bowl, whisk together the all-purpose flour, ground coffee or instant coffee granules, and salt.
- Gradually add the dry ingredients to the butter mixture, mixing until the dough comes together. Be careful not to overmix.
- If the dough is too soft, you can refrigerate it for about 30 minutes to make it easier to handle.
- Roll the dough into small balls and place them on the prepared baking sheets, leaving space between each cookie.
- Flatten each cookie slightly with the back of a spoon or your fingers.
- Optional: Press a coffee bean into the center of each cookie or sprinkle a few additional coffee grounds on top for decoration.
- Bake in the preheated oven for approximately 10-12 minutes or until the edges are lightly golden.
- Allow the cookies to cool on the baking sheets for a few minutes before transferring them to a wire rack to cool completely.
- Once cooled, these Coffee Cookies are ready to be enjoyed with a cup of your favorite coffee.
