  • 1 cup granulated sugar
  • 2 cups all-purpose flour
  • 2 tablespoons ground coffee or instant coffee granules (adjust to taste)
  • 1 teaspoon vanilla extract
  • 1/4 teaspoon salt
  • Optional: Coffee beans or additional coffee grounds for decoration

  1. Preheat your oven to 350°F (175°C). Line baking sheets with parchment paper.
  2. In a large mixing bowl, cream together the softened butter and granulated sugar until light and fluffy.
  3. Add the vanilla extract and mix until well combined.
  4. In a separate bowl, whisk together the all-purpose flour, ground coffee or instant coffee granules, and salt.
  5. Gradually add the dry ingredients to the butter mixture, mixing until the dough comes together. Be careful not to overmix.
  6. If the dough is too soft, you can refrigerate it for about 30 minutes to make it easier to handle.
  7. Roll the dough into small balls and place them on the prepared baking sheets, leaving space between each cookie.
  8. Flatten each cookie slightly with the back of a spoon or your fingers.
  9. Optional: Press a coffee bean into the center of each cookie or sprinkle a few additional coffee grounds on top for decoration.
  10. Bake in the preheated oven for approximately 10-12 minutes or until the edges are lightly golden.
  11. Allow the cookies to cool on the baking sheets for a few minutes before transferring them to a wire rack to cool completely.
  12. Once cooled, these Coffee Cookies are ready to be enjoyed with a cup of your favorite coffee.
