Ingredients:

  • 1 cup semolina (sooji/rava)
  • 1/2 cup ghee (clarified butter)
  • 1 cup sugar
  • 2 cups water
  • 1/2 cup milk
  • 1/4 teaspoon cardamom powder
  • Chopped nuts for garnish (e.g., almonds, cashews)

Steps:

  1. In a pan, heat ghee over medium heat.
  2. Add semolina to the ghee and roast it until it turns golden brown, releasing a nutty aroma. Keep stirring to ensure even roasting.
  3. In a separate saucepan, combine water and sugar. Heat this mixture until the sugar dissolves, creating a sugar syrup.
  4. Gradually add the sugar syrup to the roasted semolina while stirring continuously to avoid lumps.
  5. Carefully pour in the milk, continuing to stir the mixture.
  6. Add cardamom powder for flavor and continue to cook the sheera over low to medium heat.
  7. Keep stirring until the sheera thickens and starts to leave the sides of the pan. The semolina should be well-cooked and have a smooth consistency.
  8. In another small pan, prepare a caramel by melting a tablespoon of sugar until it turns golden brown. Be cautious not to burn it.
  9. Quickly pour the caramel into the sheera and stir to incorporate the caramel flavor throughout.
  10. Garnish the Caramel Semolina Sheera with chopped nuts of your choice.
  11. Serve the sheera warm, either on its own or as a delightful accompaniment to a festive meal.
