Vegetable Cream

Ingredients:

  • 2 tablespoons butter
  • 1 onion, finely chopped
  • 2 carrots, diced
  • 2 celery stalks, diced
  • 2 potatoes, peeled and diced
  • 1 cup broccoli florets
  • 4 cups vegetable broth
  • 1 cup heavy cream
  • 1 teaspoon dried thyme
  • Salt and pepper to taste
  • Fresh parsley for garnish (optional)

Steps:

  1. In a large pot, melt butter over medium heat.
  2. Add finely chopped onions to the pot and sauté until they become translucent.
  3. Stir in diced carrots, celery, and potatoes. Cook for a few minutes until the vegetables start to soften.
  4. Pour in the vegetable broth, ensuring it covers the vegetables. Bring to a gentle boil, then reduce the heat to simmer until the vegetables are tender.
  5. Add broccoli florets to the pot and continue to simmer until all the vegetables are cooked through.
  6. Using an immersion blender, blend the soup until smooth. Alternatively, transfer the mixture to a blender in batches and blend until smooth.
  7. Return the blended mixture to the pot and stir in heavy cream.
  8. Season the Vegetable Cream with dried thyme, salt, and pepper. Adjust the seasoning according to your taste.
  9. Allow the soup to simmer for a few more minutes to let the flavors meld.
  10. Serve the Vegetable Cream hot, garnished with fresh parsley if desired.
