For the Cake:

  • 2 cups all-purpose flour
  • 1 and 3/4 cups granulated sugar
  • 3/4 cup unsweetened cocoa powder
  • 2 teaspoons baking powder
  • 1 and 1/2 teaspoons baking soda
  • 1 teaspoon salt
  • 2 large eggs
  • 1 cup whole milk
  • 1/2 cup vegetable oil
  • 2 teaspoons vanilla extract
  • 1 cup boiling water

For the Chocolate Ganache (Optional):

  • 1 cup heavy cream
  • 8 ounces semi-sweet chocolate, chopped

Cooking Steps:

For the Cake:

Step 1: Preheat your oven to 350°F (175°C). Grease and flour two 9-inch round cake pans.

Step 2: In a large bowl, sift together all-purpose flour, sugar, cocoa powder, baking powder, baking soda, and salt.

Step 3: Add eggs, milk, vegetable oil, and vanilla extract to the dry ingredients. Mix until well combined.

Step 4: Gradually add boiling water to the batter, stirring continuously. The batter will be thin; this is normal.

Step 5: Pour the batter evenly into the prepared cake pans.

Step 6: Bake in the preheated oven for 30-35 minutes or until a toothpick inserted into the center comes out clean.

For the Chocolate Ganache (Optional):

Step 7: If making ganache, heat heavy cream in a saucepan until it just starts to simmer. Remove from heat and add chopped chocolate. Let it sit for a few minutes, then stir until smooth.

For Assembly:

Step 8: Allow the cakes to cool completely. If using ganache, pour it over the cooled cake, letting it drip down the sides.
