Corn fritters
You won't be able to stop at one!
INGREDIENTS
- 125g (1 cup) of flour
- 1 tsp of baking powder
- 1/4 tsp of paprika
- Salt
- 1/4 tsp of garlic powder
- Pepper
- 500g (3 cups) of corn
- 2 eggs
- Cilantro
- 1 tsp of sugar
- 80g (1 cup) of cheese
- 80ml (1/3 cup) of almond milk
- Oil for frying
METHOD
- In a bowl add the flour, baking powder, paprika, salt, garlic powder, and pepper and mix. Add the corn, eggs, cilantro, sugar, cheese, and milk and mix all well together.
- Add oil to a pan and heat oil until it begins to sizzle. Place batter for 4 fritters evenly spaced into the skillet.
- Press each one down lightly with the back of a spatula and cook for 3-4 minutes per side until they are golden brown.
