Toffee Elaichi Modak

TOFFEE ELAICHI MODAK RECIPE- Ever thought of bringing a twist of toffee to your favorite modak? This Ganesh Chaturthi, here’s a special modak recipe which me and my family loved creating with Nestlé MILKMAID! Trust me, you’ll love this flavorful combo of caramelized MILKMAID in modaks!

Ingredients

For Nougat (for stuffing)

  • 100 gms Sugar,
  • 3-4 drops Water,
  • Pinch of baking soda,

For Toffee Modak

  • 2 tsp Butter, cube,
  • 17-18 Any glucose biscuit, crumb,
  • 2 tsp Butter, cube,
  • 1 tin Prepared Nestle MILKMAID,
  • ¼ tsp Cardamom powder,
  • Prepared Biscuit, crumb,

For Toffee Modak Stuffing

  • 1 tsp Ghee,
  • ⅓ cup Mixed nuts, chopped (roasted almonds, pistachios,)
  • Prepared Nougat,

For Chocolate Modak

  • ½ tin Nestle MILKMAID,
  • 6-7 Any glucose biscuit, crumb,
  • ¼ cup Cocoa powder,
  • ¼ cup Dessicated coconut,

For Dryfruit Modak

  • ½ tin Nestle MILKMAID,
  • 10-12 Any glucose biscuit, crumb,
  • 2 tbsp Mixed Dry Fruit,

Other Ingredient

  • Ghee for greasing, घी

For Garnish

  • 6-7 Pistachios, blanched, sliver,
  • White chocolate, melted,
  • Silver vrak,
  • Prepared Nought,
  • Rose petals,

Process

For Nougat

  1. In a small shallow pan, add sugar, little water and allow the sugar to cook for a while.
  2. Once sugar is caramelized perfectly, add baking soda and cook for a minute.
  3. Transfer into a silicon mat and keep it aside to set.
  4. Once the nougat is set, roughly crushed and keep it aside for further use.

For Toffee Modak

  1. In a pressure cooker, add water, milkmaid tin and cover it with the lid. Allow it to cook for 3-4 whistles and keep it aside for further use.
  2. In a shallow pan, add butter once it's melted, add biscuit crumbs and allow to cook for a minute, add butter and mix well, transfer it to a bowl and keep it aside for further use.
  3. In the same pan, add prepared toffee milkmaid and cook for 5-6 minutes, add cardamom powder, prepared roasted biscuit crumbs and cook for a while.
  4. Transfer it on a tray and keep it aside for further use.

For Toffee Modak Stuffing

  1. In a pan, add ghee when it’s hot, add almonds, pistachios and saute it on low flame for 2-3 minutes and transfer it onto the plate.
  2. Add half of the prepared nougat into it and mix it well and keep it aside for further use.

For Chocolate Modak

  1. In a bowl, add milkmaid, biscuit crumbs, cocoa powder and mix everything well.
  2. Add desiccated coconut and mix well, keep aside for further use.

For Dryfruit Modak

  1. In a bowl, add milkmaid, biscuit crumb, dry fruit and mix everything well.
  2. Keep it aside for further use.

For Shaping Modak

  1. Apply ghee on the hands, roll the toffee modak mixture into small lemon size balls.
  2. Take the prepared balls and stuff it with the prepared dry fruits mixture.
  3. Close the edges and give it desired shape of choice.
  4. Take the modak mold and grease it with ghee, fill it up with the prepared toffee modak mixture and stuff it with the prepared dry fruits stuffing, scrape out the excess mixture with the help of a knife.
  5. Demold the modak and place the modak into a serving tray or a dish.
  6. Drizzle some melted white chocolate. Garnish it with silver vrak, dry fruits, prepared nougat and rose petals. Serve.
