Fluffy Caramel Cake
Ingredients
Baking tray(it will be 9in * 6.7in tray)
Egg yolk dough:
- 2 Egg yolks(40g)
- 20g Sugar
- 60g Caramel
- 30g Water
- 25g Melted butter
- 80g Flour
- 2g Baking powder
Meringue:
- 2 Egg whites (80g)
- 20g Sugar
- 12g Almond slices
Directions
Preparation:
Line the cake pan with parchment paper.
①Place caramels and water in heatproof bowl and microwave 600w for 30 seconds.
Mix well with a spoon.
Microwave 600w for 20 seconds.
Microwave until caramel weighs about 75g,set aside.
②Put 2 egg yolks in a bowl, and put 2 egg whites in another bowl. Let the egg white sit in a fridge.
③Add granulated sugar to the yolk.
Add melted butter and melted caramel.
④Add dry ingredients to the mixture.
Mix it until the flour completely dissolves
⑤Take the egg white out from the fridge. Beat it lightly until watery. Whisk it with a hand mixer on medium speed.
When it becomes white and fluffy, add granulated sugar in 3 parts. Whisk it to the soft-peak stage.
Preheat the oven to 356 °F .
⑦⑥Add the meringue in 3 parts. Stir well until smooth at 1st addition.
From the next addition (2nd / 3rd), mix the top lightly, and then scoop it up and let it slip through your whisk. Repeat until smooth.
Finally, mix the whole mixture with a rubber spatula.
⑦Pour it into a baking sheet, and flatten it.
Sprinkle almond slices on top.
⑧Preheat the oven at 356 °F and bake it for 12 min.
After that, turn the degree down to 338 °F and bake it again for 6min.
