Chicken Pasta Bake

Everything a pasta bake should be! Big, juicy, cheesy - with bacon and sizzling seasoned chicken. Love adding chunks of tomato for extra pockets for juiciness. SO GOOD!

Ingredients:

  • 1 pound of pasta (penne, fusilli or any other shape)
  • 2 tablespoons of olive oil
  • 1 onion, chopped
  • 2 cloves of garlic, minced
  • 2 chicken breasts, diced
  • 1 can of diced tomatoes
  • 1 teaspoon of dried basil
  • 1 teaspoon of dried oregano
  • Salt and pepper to taste
  • 1 cup of shredded mozzarella cheese
  • 1/4 cup of grated Parmesan cheese

Instructions:

  1. Preheat the oven to 375°F (190°C).
  2. Cook the pasta in a large pot of boiling salted water according to package instructions. Drain and set aside.
  3. Heat the olive oil in a large skillet over medium-high heat. Add the onion and garlic and cook for 2-3 minutes, or until the onion is translucent.
  4. Add the diced chicken to the skillet and cook for 5-7 minutes, or until the chicken is no longer pink.
  5. Add the canned tomatoes, dried basil, and dried oregano to the skillet. Season with salt and pepper to taste. Cook for 5-10 minutes, or until the sauce has thickened slightly.
  6. Combine the cooked pasta with the chicken and tomato sauce in a large mixing bowl.
  7. Transfer the pasta mixture to a baking dish. Sprinkle the shredded mozzarella cheese and grated Parmesan cheese over the top.
  8. Bake the pasta for 20-25 minutes, or until the cheese is melted and bubbly.
  9. Let the pasta cool for a few minutes before serving.
