Soy Sauce Pickled Cucumber

Ingredients

  • 2 Persian Cucumber(Japanese cucumbers)
  • Salt

Seasoning:

  • 1.5 tbs Soy sauce
  • 1 tbs Vinegar  
  • 1/2 tsp Sugar
  • 1 tbs Sesame oil  
  • 1 tsp Grated garlic  
  • *Red chili pepper (optional) 
  • 1 tbs White sesame seeds

【Directions】

①Wash the cucumber thoroughly and cut off both ends.

②Sprinkle salt over the cucumber. Roll the cucumber on a cutting board to help the salt penetrate.

③Make incisions on both sides of the cucumber with a knife, about 2mm apart.

④Press down on the cucumber with the palm of your hand to crush it. Cut it into bite-sized pieces.

⑤Mix the ingredients marked with a well.

⑥Squeeze out excess moisture from the cucumber.

Toss it with the seasoning mixture, and it's ready to serve!
