Gourmet Blueberry Muffin Cookies combine the best elements of blueberry muffins and cookies into a delightful treat. Here's a recipe to help you make these delicious cookies:
Ingredients:
- 1/2 cup unsalted butter, softened
- 3/4 cup granulated sugar
- 1 large egg
- 1 teaspoon vanilla extract
- 1 and 1/2 cups all-purpose flour
- 1/2 teaspoon baking powder
- 1/4 teaspoon salt
- 1/4 cup milk
- 1 cup fresh blueberries
- 1/2 cup rolled oats
- 1/4 cup granulated sugar (for rolling)
Instructions:
- Preheat your oven to 350°F (175°C). Line a baking sheet with parchment paper or silicone baking mat.
- In a mixing bowl, cream together the softened butter and granulated sugar until light and fluffy.
- Add the egg and vanilla extract to the butter mixture and beat until well combined.
- In a separate bowl, whisk together the all-purpose flour, baking powder, and salt.
- Gradually add the dry ingredients to the butter mixture, alternating with the milk. Begin and end with the dry ingredients, mixing just until combined after each addition. Do not overmix.
- Gently fold in the fresh blueberries and rolled oats into the cookie dough, being careful not to crush the blueberries.
- Scoop the dough using a cookie scoop or tablespoon and roll it into balls. Roll each ball in granulated sugar to coat.
- Place the coated dough balls onto the prepared baking sheet, spacing them a few inches apart to allow for spreading.
- Bake the cookies in the preheated oven for about 12-15 minutes or until the edges are golden brown.
- Remove the cookies from the oven and let them cool on the baking sheet for a few minutes. Then transfer them to a wire rack to cool completely.
- Once the cookies have cooled, serve and enjoy your gourmet blueberry muffin cookies!
These cookies are best enjoyed within a few days of baking. You can store them in an airtight container at room temperature. The recipe yields approximately 2 dozen cookies, so adjust the quantities accordingly if you want to make more or fewer cookies. Happy baking!
