5 Ingredient Tomato Soup

A simple 5 ingredient tomato soup made with butter, onion, and canned San Marzano tomatoes. Based on the Marcella Hazan tomato sauce recipe. This hits the cozy vibes just right.

Ingredients:

  • 2 tablespoons butter
  • 1 large onion, chopped
  • 2 cans (28 oz each) San Marzano tomatoes (whole or crushed)
  • Salt and pepper to taste
  • Fresh basil or thyme for garnish (optional)

Instructions:

  1. In a large pot, melt the butter over medium heat.
  2. Add the chopped onion and sauté until it becomes translucent and slightly caramelized.
  3. Pour in the canned San Marzano tomatoes along with their juices. If using whole tomatoes, you can break them up with a spoon or use crushed tomatoes for convenience.
  4. Season with salt and pepper to taste. Remember that canned tomatoes may already have some salt, so adjust accordingly.
  5. Bring the soup to a simmer and let it cook for about 15-20 minutes to allow the flavors to meld.
  6. Use an immersion blender to blend the soup until smooth. Alternatively, transfer batches to a blender and blend until smooth. Be cautious when blending hot liquids.
  7. Taste and adjust the seasoning if needed.
  8. Serve the tomato soup hot, garnished with fresh basil or thyme if desired.
