Vegetable Sotanghon Soup

Ingredients:

  • 3 cloves garlic
  • 1 red onion
  • 1 stalk spring onion
  • 2 small carrots
  • 1 bell pepper
  • 1 cup chinese cabbage
  • 1 cup cabbage
  • 100g shiitake mushrooms
  • 100g vermicelli noodles + hot water
  • 3 tbsp annatto oil
  • 2 cups mushroom stock
  • 3 cups water
  • salt and pepper to taste

Tofu and Kimchi Stew (Tofu Kimchi Jjigae)

Ingredients:

  • 5 cloves garlic
  • 1 red onion
  • 1 stalk scallion
  • 2 king oyster mushrooms
  • 50g enoki mushrooms
  • 300g soft or firm tofu
  • 2 tbsp sesame oil
  • 1 cup vegetable kimchi
  • 800ml water
  • 1 tbsp soy sauce
  • 1 tbsp vegetable stock powder
  • 1-2 tbsp gochuchang (red chili paste)

Veggie Tinola

Ingredients:

  • Tofu "Chicken"
  • 200g silken tofu (pressed, freezed and thawed for three cycles)
  • 2 tbsp nutritional yeast
  • 2 tbsp cornstarch
  • 2 tbsp soy sauce
  • 2 tbsp water
  • oil spray
  • air fry at 180°C for 10-12 minutes, flip halfway
  • 2 tbsp olive oil
  • 5 cloves garlic
  • 1 thumb ginger
  • 1 red onion
  • 2 medium sayote / chayote
  • 200g king oyster mushrooms
  • salt and pepper
  • 2 cups vegetable stock
  • 2 cups water
  • 2 tbsp vegetarian fish sauce
  • chili tops
  • green chili
