Ingredients:
For the Italian Beef:
- 3 to 4 pounds beef roast (e.g., chuck roast)
- 1 tablespoon vegetable oil
- 1 onion, thinly sliced
- 4 cloves garlic, minced
- 1 teaspoon dried oregano
- 1 teaspoon dried basil
- 1 teaspoon dried thyme
- 1 teaspoon dried rosemary
- 1 teaspoon dried parsley
- Salt and black pepper to taste
- 4 cups beef broth
For the Sandwiches:
- Italian or French rolls
- Provolone cheese slices (optional)
- Giardiniera (Italian pickled vegetables), for topping
Instructions:
For the Italian Beef:
- Preheat your oven to 325°F (165°C).
- In a Dutch oven or oven-safe pot, heat vegetable oil over medium-high heat. Season the beef roast with salt and pepper.
- Brown the beef on all sides in the hot oil. Once browned, remove the beef from the pot and set it aside.
- In the same pot, add sliced onions and minced garlic. Sauté until the onions are translucent.
- Place the browned beef back into the pot with the onions and garlic.
- Add dried oregano, basil, thyme, rosemary, parsley, salt, and black pepper.
- Pour in the beef broth, ensuring the roast is mostly covered.
- Cover the pot and transfer it to the preheated oven. Cook for about 3-4 hours or until the beef is tender and easily shreds.
For the Sandwiches:
- Remove the beef from the pot and shred it using two forks.
- Strain the cooking liquid and reserve it for dipping.
- Slice Italian or French rolls and fill them with the shredded beef. Optionally, add a slice of provolone cheese.
- Top the sandwiches with giardiniera for some extra flavor and crunch.
- Serve the sandwiches with a side of the reserved cooking liquid for dipping.
