This Italian Beef Sandwich is tender and full of flavor. Tender beef, slow cooked in savory juices paired with spicy fixings make a savory melt in your mouth meal!

Ingredients:

For the Italian Beef:

  • 3 to 4 pounds beef roast (e.g., chuck roast)
  • 1 tablespoon vegetable oil
  • 1 onion, thinly sliced
  • 4 cloves garlic, minced
  • 1 teaspoon dried oregano
  • 1 teaspoon dried basil
  • 1 teaspoon dried thyme
  • 1 teaspoon dried rosemary
  • 1 teaspoon dried parsley
  • Salt and black pepper to taste
  • 4 cups beef broth

For the Sandwiches:

  • Italian or French rolls
  • Provolone cheese slices (optional)
  • Giardiniera (Italian pickled vegetables), for topping

Instructions:

For the Italian Beef:

  1. Preheat your oven to 325°F (165°C).
  2. In a Dutch oven or oven-safe pot, heat vegetable oil over medium-high heat. Season the beef roast with salt and pepper.
  3. Brown the beef on all sides in the hot oil. Once browned, remove the beef from the pot and set it aside.
  4. In the same pot, add sliced onions and minced garlic. Sauté until the onions are translucent.
  5. Place the browned beef back into the pot with the onions and garlic.
  6. Add dried oregano, basil, thyme, rosemary, parsley, salt, and black pepper.
  7. Pour in the beef broth, ensuring the roast is mostly covered.
  8. Cover the pot and transfer it to the preheated oven. Cook for about 3-4 hours or until the beef is tender and easily shreds.

For the Sandwiches:

  1. Remove the beef from the pot and shred it using two forks.
  2. Strain the cooking liquid and reserve it for dipping.
  3. Slice Italian or French rolls and fill them with the shredded beef. Optionally, add a slice of provolone cheese.
  4. Top the sandwiches with giardiniera for some extra flavor and crunch.
  5. Serve the sandwiches with a side of the reserved cooking liquid for dipping.
