Ingredients:

  • 2 tablespoons oil
  • 1 onion, chopped
  • 3 cloves garlic, minced

  • 1 cup potatoes, cubed
  • 1 cup tomato sauce
  • 1 cup vegetable broth
  • 1 bay leaf
  • 1 teaspoon soy sauce
  • 1 teaspoon sugar
  • Salt and pepper to taste
  • Mixed vegetables of your choice (e.g., green peas, chickpeas, mushrooms)

Instructions:

  1. In a pot, sauté onion and garlic in oil until fragrant.
  2. Add bell peppers, carrots, and potatoes. Cook for a few minutes until slightly tender.
  3. Pour in tomato sauce and vegetable broth. Add the bay leaf, soy sauce, sugar, salt, and pepper.
