Katsu Curry

We will show you how to make Katsu curry, a popular dish that combines Tonkatsu, a deep-fried cutlet (Katsu) with a flavorful Japanese curry. It’s a little more work to make Katsu Curry since you have to make practically 2 dishes. However, the work will pay off in the end. It is absolutely delicious!

Ingredients:

For Chicken Katsu:

  • 4 boneless, skinless chicken breasts
  • Salt and pepper to taste
  • All-purpose flour for dredging
  • 2 large eggs, beaten
  • Panko breadcrumbs for coating
  • Vegetable oil for frying

For Curry Sauce:

  • 1 onion, finely chopped
  • 2 carrots, peeled and diced
  • 2 potatoes, peeled and diced
  • 2 cloves garlic, minced
  • 2 tablespoons vegetable oil
  • 3 tablespoons curry powder
  • 2 tablespoons all-purpose flour
  • 3 cups chicken or vegetable broth
  • 2 tablespoons soy sauce
  • 1 tablespoon honey or sugar
  • Salt and pepper to taste

For Serving:

  • Cooked Japanese rice

Instructions:

For Chicken Katsu:

  1. Prepare Chicken:
    • Season the chicken breasts with salt and pepper.
  2. Dredge in Flour:
    • Dredge each chicken breast in all-purpose flour, shaking off any excess.
  3. Coat in Egg:
    • Dip the floured chicken in beaten eggs.
  4. Coat in Breadcrumbs:
    • Press the chicken into Panko breadcrumbs, ensuring an even coating.
  5. Fry:
    • Heat vegetable oil in a large skillet over medium-high heat. Fry the breaded chicken until golden brown and cooked through (about 5-7 minutes per side). Drain on paper towels.

For Curry Sauce:

  1. Sauté Vegetables:
    • In a separate pot, heat vegetable oil over medium heat. Add chopped onion, diced carrots, and diced potatoes. Sauté until the vegetables are slightly softened.
  2. Add Garlic and Curry Powder:
    • Add minced garlic and curry powder to the vegetables. Stir and cook for an additional 1-2 minutes until fragrant.
  3. Make Roux:
    • Sprinkle flour over the vegetable mixture and stir to create a roux.
  4. Pour Broth:
    • Gradually pour in chicken or vegetable broth, stirring constantly to avoid lumps.
  5. Season:
    • Add soy sauce, honey (or sugar), salt, and pepper to taste. Simmer until the vegetables are tender and the sauce thickens.
  6. Blend (Optional):
    • For a smoother consistency, you can use an immersion blender to blend the curry sauce.

Serving:

  1. Slice Chicken:
    • Slice the fried chicken into strips.
  2. Serve Over Rice:
    • Serve the sliced chicken over cooked Japanese rice and generously pour the curry sauce over the top.
  3. Enjoy:
