Rainbow Buttercream Christmas Cake

Ingredients:

  • 2 1/2 cups all-purpose flour
  • 2 1/2 teaspoons baking powder
  • 1/2 teaspoon salt
  • 1 cup unsalted butter, softened
  • 2 cups granulated sugar
  • 4 large eggs
  • 1 teaspoon vanilla extract
  • 1 1/4 cups whole milk
  • Assorted gel food colors for the buttercream
  • 3 cups powdered sugar for the buttercream

Cooking Steps:

  1. Preheat the oven to 350°F (180°C) and grease and flour three 8-inch cake pans.
  2. In a bowl, whisk together flour, baking powder, and salt.
  3. In another bowl, cream together butter and sugar until light and fluffy. Add eggs one at a time, followed by vanilla extract.
  4. Gradually mix in the dry ingredients, alternating with milk, until well combined.
  5. Divide the batter evenly into separate bowls and tint each bowl with a different color of gel food coloring.

  8. For the buttercream, beat butter until creamy. Gradually add powdered sugar and beat until smooth.

  10. Place one cake layer on a serving plate, frost the top with a layer of buttercream. Repeat with the remaining layers.
  11. Use the remaining buttercream to frost the sides and top of the cake, creating a rainbow effect.
  12. Decorate as desired with festive sprinkles, ornaments, or edible glitter.
