Chicken Fried Rice

Ingredients:

  • 2 cups cooked jasmine rice (preferably chilled)
  • 1 cup cooked chicken breast, diced
  • 1 cup mixed vegetables (peas, carrots, corn, and chopped green onions)
  • 2 eggs, lightly beaten
  • 3 tablespoons soy sauce
  • 1 tablespoon oyster sauce
  • 1 teaspoon sesame oil
  • 2 tablespoons vegetable oil
  • 2 cloves garlic, minced
  • Salt and pepper to taste

Steps:

  1. Heat vegetable oil in a large skillet or wok over medium-high heat.
  2. Add minced garlic to the hot oil and sauté for about 30 seconds until fragrant.
  3. Add the mixed vegetables to the skillet and stir-fry for 2-3 minutes until they are tender-crisp.
  4. Push the vegetables to one side of the skillet and pour the beaten eggs into the empty side. Scramble the eggs until just cooked.
  5. Combine the cooked rice and diced chicken with the vegetables and eggs in the skillet. Mix well.
  6. In a small bowl, whisk together soy sauce, oyster sauce, and sesame oil.
  7. Pour the sauce over the rice and chicken mixture. Stir-fry for an additional 2-3 minutes, ensuring even distribution of the sauce.
  8. Season with salt and pepper to taste. Adjust the seasoning if needed.
  9. Garnish the Chicken Fried Rice with chopped green onions.
  10. Serve hot and enjoy this flavorful and comforting dish!
