Chicken Fried Rice

Ingredients:
- 2 cups cooked jasmine rice (preferably chilled)
- 1 cup cooked chicken breast, diced
- 1 cup mixed vegetables (peas, carrots, corn, and chopped green onions)
- 2 eggs, lightly beaten
- 3 tablespoons soy sauce
- 1 tablespoon oyster sauce
- 1 teaspoon sesame oil
- 2 tablespoons vegetable oil
- 2 cloves garlic, minced
- Salt and pepper to taste
Steps:
- Heat vegetable oil in a large skillet or wok over medium-high heat.
- Add minced garlic to the hot oil and sauté for about 30 seconds until fragrant.
- Add the mixed vegetables to the skillet and stir-fry for 2-3 minutes until they are tender-crisp.
- Push the vegetables to one side of the skillet and pour the beaten eggs into the empty side. Scramble the eggs until just cooked.
- Combine the cooked rice and diced chicken with the vegetables and eggs in the skillet. Mix well.
- In a small bowl, whisk together soy sauce, oyster sauce, and sesame oil.
- Pour the sauce over the rice and chicken mixture. Stir-fry for an additional 2-3 minutes, ensuring even distribution of the sauce.
- Season with salt and pepper to taste. Adjust the seasoning if needed.
- Garnish the Chicken Fried Rice with chopped green onions.
- Serve hot and enjoy this flavorful and comforting dish!
