Hot Chocolate in a Cookie
Ingredients:
- 1 cup unsalted butter, softened
- 1 cup granulated sugar
- 2 large eggs
- 1 teaspoon vanilla extract
- 2 cups all-purpose flour
- 1/2 cup unsweetened cocoa powder
- 1 teaspoon baking soda
- 1/4 teaspoon salt
- 1 cup chocolate chips
- 1 cup mini marshmallows
Cooking Steps:
Step 1: Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
Step 2: In a large bowl, cream together softened butter and granulated sugar until light and fluffy. Add eggs one at a time, beating well after each addition. Stir in the vanilla extract.
Step 3: In a separate bowl, whisk together the flour, cocoa powder, baking soda, and salt. Gradually add the dry ingredients to the wet ingredients, mixing until just combined.
Step 4: Fold in the chocolate chips to the cookie dough.
Step 5: Scoop tablespoon-sized portions of dough onto the prepared baking sheet, leaving space between each.
Step 6: Bake in the preheated oven for 8-10 minutes. Remove from the oven and quickly press a few mini marshmallows onto the top of each cookie.
Step 7: Return the cookies to the oven and bake for an additional 2-3 minutes, or until the marshmallows are lightly toasted.
Step 8: Allow the Hot Chocolate Cookies to cool on the baking sheet for a few minutes before transferring them to a wire rack to cool completely.
