Rainbow Fondant Chocolate Cake
Ingredients:
For the Chocolate Cake:
- 2 cups all-purpose flour
- 1 and 3/4 cups granulated sugar
- 3/4 cup unsweetened cocoa powder
- 1 and 1/2 teaspoons baking powder
- 1 and 1/2 teaspoons baking soda
- 1 teaspoon salt
- 2 large eggs
- 1 cup whole milk
- 1/2 cup vegetable oil
- 2 teaspoons vanilla extract
- 1 cup boiling water
For the Rainbow Fondant:
- Store-bought or homemade fondant in various colors (red, orange, yellow, green, blue, purple)
For the Frosting:
- Chocolate ganache or your favorite frosting
Steps:
Chocolate Cake:
Step 1: Preheat your oven to 350°F (175°C). Grease and flour three 8-inch round cake pans.
Step 2: In a large bowl, whisk together flour, sugar, cocoa powder, baking powder, baking soda, and salt.
Step 3: Add eggs, milk, vegetable oil, and vanilla extract to the dry ingredients. Mix until well combined.
Step 4: Gradually add boiling water to the batter, stirring until smooth. The batter will be thin.
Step 5: Divide the batter evenly among the prepared pans.
Step 6: Bake in the preheated oven for 30-35 minutes or until a toothpick inserted into the center comes out clean.
Step 7: Allow the cakes to cool completely before assembling.
Assembly:
Step 8: Level the tops of the cakes if needed.
Step 9: Stack the cakes with layers of chocolate ganache or frosting between them.
Rainbow Fondant:
Step 10: Roll out each color of fondant into thin sheets.
Step 11: Cut out strips of each color to create a rainbow pattern.
Step 12: Carefully place the fondant strips around the sides of the cake in rainbow order.
Step 13: Smooth the fondant with a fondant smoother or your hands to adhere it to the cake.
Step 14: Trim any excess fondant from the top and bottom of the cake.
Step 15: Optional: Decorate the top of the cake with additional fondant shapes or decorations.
