Rainbow Chocolate and Buttercream Cake

Ingredients:

For the Chocolate Cake:

  • 2 cups all-purpose flour
  • 1 and 3/4 cups granulated sugar
  • 3/4 cup unsweetened cocoa powder
  • 1 and 1/2 teaspoons baking powder
  • 1 and 1/2 teaspoons baking soda
  • 1 teaspoon salt
  • 2 large eggs
  • 1 cup whole milk
  • 1/2 cup vegetable oil
  • 2 teaspoons vanilla extract
  • 1 cup boiling water

For the Rainbow Buttercream:

  • 1 cup unsalted butter, softened
  • 4 cups powdered sugar
  • 1/4 cup whole milk or cream
  • 1 teaspoon vanilla extract
  • Gel food coloring (red, orange, yellow, green, blue, purple)

Steps:

Chocolate Cake:

Step 1: Preheat your oven to 350°F (175°C). Grease and flour three 8-inch round cake pans.

Step 2: In a large bowl, whisk together flour, sugar, cocoa powder, baking powder, baking soda, and salt.

Step 3: Add eggs, milk, vegetable oil, and vanilla extract to the dry ingredients. Mix until well combined.

Step 4: Gradually add boiling water to the batter, stirring until smooth. The batter will be thin.

Step 5: Divide the batter evenly among the prepared pans.

Step 6: Bake in the preheated oven for 30-35 minutes or until a toothpick inserted into the center comes out clean.

Step 7: Allow the cakes to cool completely before assembling.

Rainbow Buttercream:

Step 8: In a large bowl, beat softened butter until creamy.

Step 9: Gradually add powdered sugar, alternating with milk or cream, and continue to beat until smooth and fluffy.

Step 10: Add vanilla extract and mix until well combined.

Step 11: Divide the buttercream into six equal portions.

Step 12: Using gel food coloring, tint each portion with a different color of the rainbow (red, orange, yellow, green, blue, purple).

Assembly:

Step 13: Level the tops of the cakes if needed.

Step 14: Place one cake layer on a serving plate and spread a thin layer of red buttercream on top.

Step 15: Stack the next layer and repeat the process with orange, continuing with each color of the rainbow.

Step 16: Frost the sides and top of the entire cake with the remaining buttercream.

Step 17: Optionally, smooth the buttercream with a cake scraper for a polished finish.

Step 18: Decorate the top with additional rainbow patterns or decorations if desired.
