Ingredients:

For the Rainbow Cake Layers:

  • Your preferred rainbow cake recipe or mix (ingredients as per the recipe or mix instructions)
  • Gel food coloring (red, orange, yellow, green, blue, purple)

For the Unicorn Buttercream Frosting:

  • 2 cups unsalted butter, softened
  • 4 cups powdered sugar
  • 1/4 cup whole milk or cream
  • 2 teaspoons vanilla extract
  • Gel food coloring (pink, turquoise, purple)
  • Edible gold or silver dust (for unicorn horn)

For Decorations:

  • Rainbow-colored fondant
  • Edible gold or silver stars
  • Edible flowers (optional)
  • Edible gold or silver unicorn horn (or create one with fondant and dust it with edible dust)

Steps:

Rainbow Cake Layers:

Step 1: Preheat your oven according to the rainbow cake recipe or mix instructions.

Step 2: Prepare the rainbow cake batter according to the recipe or mix instructions.

Step 3: Divide the batter evenly into six bowls.

Step 4: Tint each bowl of batter with gel food coloring to create vibrant rainbow colors (red, orange, yellow, green, blue, purple).

Step 5: Pour each colored batter into separate cake pans and bake according to the recommended time and temperature.

Step 6: Allow the cake layers to cool completely.

Unicorn Buttercream Frosting:

Step 7: In a large bowl, beat softened butter until creamy.

Step 8: Gradually add powdered sugar, alternating with milk or cream, and continue to beat until smooth and fluffy.

Step 9: Add vanilla extract and mix until well combined.

Step 10: Divide the buttercream into three portions and tint each portion with a different color (pink, turquoise, purple).

Assembly:

Step 11: Level the tops of the rainbow cake layers if needed.

Step 12: Place the first cake layer on a serving plate and spread a thin layer of pink buttercream on top.

Step 13: Stack the next cake layer and repeat the process with turquoise and purple buttercream.

Step 14: Continue stacking and frosting each layer, creating a rainbow pattern.

Step 15: Frost the sides and top of the entire cake with additional unicorn-colored buttercream.

Step 16: Smooth the buttercream with a cake scraper for a polished finish.

Step 17: Decorate the top with rainbow-colored fondant decorations, edible stars, edible flowers, and an edible unicorn horn.

Step 18: Optionally, add additional unicorn-inspired decorations as desired.
