Lasagna Soup
Ingredients:
- 1 lb ground beef or Italian sausage
- 1 onion, finely chopped
- 3 cloves garlic, minced
- 1 can (28 oz) crushed tomatoes
- 1 can (14 oz) diced tomatoes
- 4 cups beef or vegetable broth
- 2 teaspoons dried oregano
- 2 teaspoons dried basil
- Salt and black pepper (to taste)
- 2 cups broken lasagna noodles or any pasta of your choice
- 1 cup ricotta cheese
- 1 cup shredded mozzarella cheese
- Fresh basil leaves, chopped (for garnish)
Steps:
Step 1: In a large pot, brown the ground beef or Italian sausage over medium heat. Drain excess fat if needed.
Step 2: Add chopped onions and minced garlic to the pot. Cook until the onions are softened.
Step 3: Stir in crushed tomatoes, diced tomatoes, beef or vegetable broth, dried oregano, dried basil, salt, and black pepper. Bring the soup to a boil.
Step 4: Add the broken lasagna noodles or pasta to the pot. Simmer until the pasta is cooked according to package instructions.
Step 5: In each serving bowl, place a dollop of ricotta cheese.
Step 6: Ladle the hot soup over the ricotta in each bowl.
Step 7: Top the soup with shredded mozzarella cheese and fresh chopped basil.
