Khasta Potato Stuffing Puri

Ingredients:
For the Potato Stuffing:
- Potatoes (3 medium-sized, boiled and mashed)
- Green peas (1/2 cup, boiled)
- Cumin seeds (1 teaspoon)
- Mustard seeds (1/2 teaspoon)
- Turmeric powder (1/2 teaspoon)
- Red chili powder (1/2 teaspoon, adjust to taste)
- Garam masala (1/2 teaspoon)
- Coriander powder (1 teaspoon)
- Amchur (dry mango powder) - 1/2 teaspoon
- Salt (to taste)
- Oil (2 tablespoons)
- Fresh coriander leaves (2 tablespoons, chopped)
For the Khasta Puri Dough:
- Whole wheat flour (2 cups)
- Semolina (1/4 cup)
- Ghee or oil (2 tablespoons)
- Water (as needed)
- Salt (1/2 teaspoon)
For Deep Frying:
- Oil (for deep frying)
Instructions:
- Prepare Potato Stuffing:
- Heat oil in a pan. Add cumin seeds and mustard seeds. Once they splutter, add turmeric powder, red chili powder, garam masala, coriander powder, and amchur. Stir for a few seconds.
- Add boiled and mashed potatoes, boiled green peas, salt, and chopped coriander leaves. Mix well and cook for 5-7 minutes. Allow the stuffing to cool.
- Make Khasta Puri Dough:
- In a bowl, combine whole wheat flour, semolina, ghee or oil, and salt. Gradually add water and knead the dough until it is smooth and firm. Cover and let it rest for 15-20 minutes.
- Shape Puri:
- Divide the dough into small lemon-sized balls. Roll each ball into a small disc and place a spoonful of the potato stuffing in the center.
- Seal and Flatten:
- Pull the edges of the dough disc together to seal the stuffing inside and roll it back into a smooth ball. Flatten the ball into a puri using a rolling pin.
- Deep Fry:
- Heat oil in a deep frying pan. Once hot, carefully slide in the stuffed puri and fry until it puffs up and turns golden brown. Repeat for the remaining puris.
- Serve:
- Drain excess oil by placing the puris on a paper towel. Serve Khasta Potato Stuffing Puri hot with yogurt, chutney, or any side of your choice.
Tips:
- Ensure that the oil is hot enough for deep frying to achieve a crispy and khasta texture.
- You can customize the spice levels in the potato stuffing according to your taste preferences.
