Railway Style Tomato Soup

Ingredients:

  • 2 tablespoons oil or ghee
  • 1 teaspoon cumin seeds
  • 1 onion, finely chopped
  • 2 cloves garlic, minced
  • 1-inch ginger, grated
  • 4 large tomatoes, chopped
  • 1/2 teaspoon turmeric powder
  • 1 teaspoon red chili powder
  • 1 teaspoon coriander powder
  • Salt (to taste)
  • 4 cups vegetable or chicken broth
  • 1/4 cup fresh coriander leaves, chopped (for garnish)
  • Freshly ground black pepper (for garnish)

Steps:

Step 1: In a large pot, heat oil or ghee over medium heat. Add cumin seeds and let them sizzle.

Step 2: Add finely chopped onions and sauté until they become golden brown.

Step 3: Stir in minced garlic and grated ginger, cooking until the raw aroma disappears.

Step 4: Add chopped tomatoes, turmeric powder, red chili powder, coriander powder, and salt. Cook until the tomatoes break down and the mixture thickens.

Step 5: Pour in the vegetable or chicken broth and bring the soup to a boil. Reduce the heat and simmer for 15-20 minutes.

Step 6: Using an immersion blender or transferring to a blender in batches, puree the soup until smooth.

Step 7: Adjust the seasoning if needed and serve hot, garnished with fresh coriander leaves and a sprinkle of freshly ground black pepper.
