16 Pancakes, Waffles, Crepes, & French Toasts

1. Healthy Banana Pancakes
Ingredients
for 4 serving 

2 ripe bananas
2 eggs
1 teaspoon vanilla extract
½ cup quick-cook oats
1 teaspoon cinnamon

Preparation

  1. Mash bananas in a large bowl until smooth. Mix in eggs and vanilla until well combined, then mix in oats and cinnamon.
  2. Heat a skillet to medium and add in a scoop* of the pancake batter. Smooth out to form an even layer.
  3. Cook for about 2-3 minutes until you start to see bubbles releasing from the top of the batter. Flip and cook until the other side is golden brown, about 1-2 minutes.
  4. Garnish your pancakes with your favorite toppings! We used banana slices, chopped walnuts & maple syrup.
  5. Enjoy!

*Note: Use ½ cup for scooping the batter to yield 4 thicker pancakes; Use ⅓ cup to yield 6 smaller pancakes.

2. Healthy Peanut Butter Chocolate Chip Pancakes

Ingredients
for 4 servings 

2 bananas
2 eggs
¼ cup peanut butter
½ cup oats
¼ cup dark chocolate chips
¼ teaspoon salt

Preparation

  1. Mash bananas in a large bowl until smooth. Mix in eggs and peanut butter until well combined, then mix in remaining ingredients.
  2. Heat a skillet to medium and add in a scoop of the pancake batter. Smooth out to form an even layer.
  3. Cook for about 2-3 minutes until you start to see bubbles releasing from the top of the batter. Flip and cook until the other side is golden brown, about 1-2 minutes.

3. Healthy Dark Chocolate Pancakes
Ingredients
for 4 servings

¼ cup dark chocolate chips
¼ teaspoon salt

4. Healthy Blueberry Pancakes
Ingredients
for 4 servings

½ cup blueberry

Preparation

  1. Mash bananas in a large bowl until smooth. Mix in eggs and vanilla until well combined, then mix in oats. Fold in blueberries carefully.
  2. Heat a skillet to medium and add in a scoop of the pancake batter. Smooth out to form an even layer.
  3. Cook for about 2-3 minutes until you start to see bubbles releasing from the top of the batter. Flip and cook until the other side is golden brown, about 1-2 minutes.
  4. Garnish your pancakes with your favorite toppings! (We used Greek yogurt, granola, fresh blueberries and maple syrup.
  5. Enjoy!

5. Pizza Waffles
Ingredients
for 4 waffles

14 oz pizza dough, 1 tube, or homemade pizza dough
4 tablespoons marinara sauce
1 cup shredded mozzarella cheese
12 slices pepperoni

Preparation

  1. Slice the pizza dough into 8 equal pieces, then press each piece flat.
  2. Place 4 pieces of dough into a preheated, greased waffle iron.
  3. Spread one tablespoon of marinara, ¼ cup (25 grams) of mozzarella, and 3 slices of pepperoni on each piece of dough.
  4. Top with the 4 remaining pieces of dough and seal.
  5. Cook for 3-5 minutes, until golden brown, then serve.
  6. Enjoy!

6. Box Brownie Waffle Sundae
Ingredients
for 8 servings 

1 box brownie mix, prepared according to package instructions
vanilla ice cream
caramel sauce

Preparation

  1. Place 4 large dollops of brownie batter in a preheated, greased waffle iron.
  2. Cook for 2-3 minutes, until brownies are semi-firm to the touch.
  3. Serve with vanilla ice cream and caramel sauce.
  4. Enjoy!

7. Ham & Cheese Panini Waffle
Ingredients
for 1 serving

 2 slices sourdough bread

3 eggs, scrambled
1 tablespoon fresh chive, chopped
2 slices ham
3 slices provolone cheese

Preparation

  1. Place a slice of bread in a preheated, greased waffle iron. Spread the eggs evenly on top.
  2. Sprinkle the chives over the eggs. Top with the ham, followed by the cheese.
  3. Place the second slice of bread on top.
  4. Cook for 3-5 minutes, until cheese is melted and the bread is golden brown, then serve.
  5. Enjoy!

8. Cinnamon Roll Waffles
Ingredients
for 4 servings

7 oz cinnamon roll dough, 1 tube, with icing

Preparation

  1. Place 4 cinnamon rolls in a preheated, greased waffle iron.
  2. Cook for 2-3 minutes, until golden brown.
  3. Serve with the reserved icing.
  4. Enjoy!

9. Caramel Banana Crepes
Ingredients
for 2 servings 

2 cups all-purpose flour
3 eggs
¼ cup butter, melted
3 tablespoons granulated sugar
3 cups milk
½ cup butter
1 cup brown sugar
1 teaspoon cinnamon
3 bananas, sliced
whipped cream, as desired
caramel sauce, as desired

Preparation

  1. In a large bowl, combine flour, eggs, butter, and sugar, stirring until ingredients are slightly mixed.
  2. Add the milk ½ cup (120 ml) at a time, stirring vigorously, making sure the milk is completely incorporated into the batter and that the batter is smooth before adding more milk.
  3. Repeat with the rest of the milk. The batter should be very liquidy and have no lumps.
  4. In a pan over medium heat, pour ⅓ cup (95 grams) of the batter in the center and swirl the batter around the edges of the pan until set.
  5. To know when the crepe is ready to flip, lift up one of the edges about ⅓ of the way. The bottom side should be golden brown. Flip the crepe.
  6. Cook until the edges are starting to slightly crisp.
  7. Remove from heat and cover with a paper towel to make sure the crepes stay moist.
  8. In a pan over medium heat, mix the brown sugar and butter until slightly bubbling.
  9. Add the cinnamon and bananas, stirring until bananas are evenly coated with the caramel.
  10. Remove from heat and cool.
  11. Spread half of the banana mixture on half of one crepe.
  12. Fold the other half of the crepe on top of the bananas, then fold the crepe in half.
  13. Repeat with the other crepe.
  14. Serve with whipped cream and a drizzle of caramel sauce.
  15. Enjoy!

10. Berry Cheesecake Crepes
Ingredients
for 2 servings 

2 cups all-purpose flour
3 eggs
¼ cup butter, melted
3 tablespoons granulated sugar
3 cups milk
1 cup raspberry
1 cup blueberry
1 cup blackberry
2 tablespoons lemon juice
¼ cup sugar
¼ cup powdered sugar
8 oz cream cheese, 1 block, softened
powdered sugar, to garnish

Preparation

  1. In a large bowl, combine flour, eggs, butter, and sugar, stirring until ingredients are slightly mixed.
  2. Add the milk ½ cup (120 ml) at a time, stirring vigorously, making sure the milk is completely incorporated into the batter and that the batter is smooth before adding more milk.

  12. Spread half of the berries on top of the cream cheese.
  13. Fold the crepe over the berries, then fold in half.
  14. Repeat with the other crepe.
  15. Serve with powdered sugar.

11. S'mores Crepes
Ingredients
for 2 servings

graham cracker, as desired
chocolate, as desired
marshmallow, as desired
chocolate syrup, to garnish

  1. In a large bowl, combine flour, eggs, butter, and sugar, stirring until ingredients are slightly mixed.
  2. Add the milk ½ cup at a time, stirring vigorously, making sure the milk is completely incorporated into the batter and that the batter is smooth before adding more milk.
  3. Repeat with the rest of the milk. The batter should be very liquidy and have no lumps.
  4. In a pan over medium heat, pour ⅓ cup of the batter in the center and swirl the batter around the edges of the pan until set.

12. Chocolate Strawberry Crepes
Ingredients
for 2 servings

2 cups all-purpose flour
3 eggs
¼ cup butter, melted
3 tablespoons granulated sugar
3 cups milk
½ cup hazelnut spread
10 strawberries, sliced
powdered sugar, to garnish

Preparation

  1. In a large bowl, combine flour, eggs, butter, and sugar, stirring until ingredients are slightly mixed.
  2. Add the milk ½ cup (120 ml) at a time, stirring vigorously, making sure the milk is completely incorporated into the batter and that the batter is smooth before adding more milk.
  3. Repeat with the rest of the milk. The batter should be very liquidy and have no lumps.

13. Strawberry Cheesecake French Toast
Ingredients
for 2 servings

 

4 slices bread
EGG WASH

4 eggs
1 tablespoon vanilla
1 cup milk
1 tablespoon cinnamon
FILLING

4 oz cream cheese, warmed, for spreading
2 tablespoons vanilla extract
2 tablespoons lemon juce
¾ cup heavy cream, optional
1 ½ cups strawberry, diced, divided
TOPPING

confectioners sugar
maple syrup

Preparation

  1. Whisk eggs, cinnamon, vanilla and milk together in medium-large bowl to create egg wash.
  2. In medium bowl mix cream cheese, vanilla, lemon juice and heavy cream (optional).
  3. Take 2 slices of bread and spread mixture on both.
  4. Press sliced strawberries on both slices & press together.
  5. Dunk in egg wash.
  6. Melt butter in a skillet on medium-low heat and cook bread for 2-3 minutes or until crumbs are crispy and bread is more solid.
  7. Stack and garnish with strawberries and confectioners sugar. Add maple syrup to preference.
  8. Enjoy!

14. S'mores French Toast
Ingredients
for 2 servings 

4 slices bread
1 tablespoon butter
4 crackers graham cracker, crushed
EGG WASH

egg, 4
1 cup milk
1 tablespoon vanilla
1 tablespoon cinnamon
FILLING

2 tablespoons chocolate, or chocolate-hazelnut spread, melted
2 tablespoons marshmallow fluff
GARNISH

mini marshmallow
chocolate syrup
mini chocolate chip, optional

Preparation

  1. Whisk eggs, cinnamon, vanilla and milk together in medium-large bowl to create egg wash.
  2. Crush graham crackers into crumbs.
  3. Dunk bread in egg wash then cover in crumbs until evenly coated.
  4. Melt butter in a skillet on medium-low heat and cook bread for 2-3 minutes or until crumbs are crispy and bread is more solid.
  5. Once you flip them over once spread fluff on one slice and melted chocolate on the other.
  6. Press slices together and stack.
  7. Garnish with mini marshmallows, mini chocolate chips (optional) and chocolate syrup.
  8. Enjoy!

15. Cinnamon Bun French Toast
Ingredients
for 2 servings

4 slices bread
1 tablespoon butter
EGG WASH

4 eggs
1 cup milk
1 tablespoon vanilla
1 tablespoon cinnamon
CREAM CHEESE MIXTURE

4 oz cream cheese
¼ cup heavy cream
¼ cup powdered sugar, plus extra for garnish
3 tablespoons cinnamon
1 teaspoon nutmeg
2 teaspoons vanilla

Preparation

  1. Whisk eggs, cinnamon, vanilla and milk together in medium-large bowl to create egg wash.
  2. In medium bowl mix cream cheese, heavy cream, powdered sugar, cinnamon, nutmeg and vanilla.
  3. Dunk 2 slices of bread in egg wash.
  4. Melt butter in a skillet on medium-low heat and cook bread for 2-3 minutes or until crumbs are crispy and bread is more solid, adding some additional butter to each toasted side. Add additional cinnamon to taste.
  5. Stack and drizzle with cream cheese mixture.
  6. Enjoy!

16. Mixed Berry French Toast
Ingredients
for 2 servings

 

4 slices bread
EGG WASH

4 eggs
1 cup milk
1 tablespoon vanilla
1 tablespoon cinnamon
MIXED BERRY SAUCE

2 cups mixed berry, blueberries, raspberries, and blackberries
2 tablespoons lemon juce
⅓ cup granulated sugar
GARNISH

confectioners sugar, optional

Preparation

  1. Whisk eggs, cinnamon, vanilla and milk together in medium-large bowl to create egg wash.
  2. Dunk bread in egg wash.
  3. Melt butter in a skillet on medium-low heat and cook bread for 2-3 minutes.
  4. Mix berries, sugar, and lemon juice in medium pan over low heat crushing and stirring berries until they form a thick sauce.
  5. Lay out slices and spread compote in between each slice then on top. Garnish with confectioners sugar (optional).
  6. Enjoy!
