1. Caramel Apple Crumble Cheesecake
Ingredients
for 12 servings

CRUST

2 cups graham cracker, crumbled
⅛ cup brown sugar
⅓ cup butter
FILLING

16 oz cream cheese, softened
¼ cup brown sugar
¼ cup white sugar
2 tablespoons cornstarch
1 teaspoon cinnamon
¼ teaspoon ginger
1 teaspoon vanilla extract
2 green apples, peeled and thinly sliced
TOPPING

¼ cup rolled oat
¼ cup flour
¼ cup brown sugar
1 teaspoon cinnamon
2 tablespoons butter, melted
caramel sauce

Preparation

  1. Preheat oven to 350°F (180°C).
  2. In a bowl, mix the crust ingredients.
  3. Press into the bottom of a greased 8-inch (20 cm) springform pan.
  4. Bake for 5 minutes.
  5. In another bowl, mix all the filling ingredients except the apples.
  6. In another bowl, mix all the topping ingredients except the caramel.
  7. Spread the filling over the graham cracker crust, then layer the apple slices on top.
  8. Sprinkle the topping mix evenly over the apple layer. .
  9. Bake for 30 minutes
  10. Drizzle on caramel sauce.
  11. Enjoy!


2. Upside-down Dulce De Leche Apple Cake

Ingredients
for 6 servings

1 ½ cups all-purpose flour
⅓ cup sugar
1 teaspoon baking powder
2 eggs
⅓ cup oil
⅓ cup milk
1 teaspoon vanilla extract
2 tablespoons butter
1 cup dulce de leche
3 granny smith apples, peeled and thinly sliced
vanilla ice cream

Preparation

  1. Preheat oven to 350°F/180°C.
  2. In a large bowl, mix together the flour, sugar, baking powder, eggs, oil, milk, and vanilla until smooth. Set aside.
  3. In a small pot over medium heat, melt the butter. Add the dulce de leche and stir until mixture comes to a boil.
  4. Immediately pour the dulce de leche mixture into a round baking pan.
  5. Layer the apples in a circular pattern with each one overlapping the other. Repeat until the entire bottom of the pan is covered.
  6. Pour the cake batter on top of the apples and spread the batter evenly on top.
  7. Bake for 25 minutes, then cool until bottom is slightly warm.
  8. Place a large round plate on top of the cake pan, then flip quickly. Give the cake pan a few pats to make sure the cake is released, then lift off the pan.
  9. Slice, serve with ice cream!

3. Caramel Apple Bake

Ingredients
for 8 servings

CARAMEL APPLE FILLING

7 apples, granny smith or pink lady are recommended
1 tablespoon lemon juice
1 teaspoon cinnamon
½ teaspoon salt
2 tablespoons flour
1 cup brown sugar
TOPPING

½ cup butter, chopped into small pieces
1 teaspoon cinnamon
½ cup white sugar
½ cup brown sugar
⅓ cup flour

Preparation

  1. Preheat oven to 350ºF (180ºC).
  2. Core apples and cut into ¼-inch slices, then cut those slices in half width-wise.
  3. In a large bowl, combine apples and all filling ingredients. Stir well and transfer to a 13x9 inch (23x33 cm) baking dish.
  4. For the topping - in a separate bowl, combine all topping ingredients and mash together with a fork until it forms into small and medium-sized clumps.
  5. Sprinkle the topping evenly over the apples.
  6. Bake for 40-45 minutes or until the liquid has thickened and the apples are tender.
  7. Cool for 10 minutes and serve with a scoop of vanilla ice cream.

4. Apple Pie Ice Cream Squares

Servings: 63 squares

INGREDIENTS

½ cup butter

2 cups graham cracker crumbs

2 tablespoons sugar

2 cups heavy whipping cream

14 ounces sweetened condensed milk

20 ounces apple pie filling

1 teaspoon ground cinnamon

Optional Toppings

Extra graham cracker crumbs

Caramel sauce

PREPARATION

1. In a bowl, combine butter, graham cracker crumbs, and sugar. Mix until well-combined.

2. Line a 9x13 inch baking pan with parchment paper and add graham cracker crumb mixture. Press down to make a firm crust. Chill in the refrigerator.

3. Pour heavy whipping cream into a large bowl and beat with an electric mixer until soft peaks are formed.

4. Add sweetened condensed milk to the bowl and gently mix into whipped cream.

5. Gently, fold in apple pie filling and cinnamon.

6. Pour cream mixture over graham cracker crust and smooth out with a spatula.

7. Freeze until the ice cream is solid enough to cut, about 12 hours.

8. Lift the parchment paper to remove from the baking pan and cut into bite-sized pieces.

9. Dip the tops in extra graham cracker crumbs and top with caramel sauce.
