Pav Bhaji

Ingredients

For Pav Bhaji

  • 2 large Carrot, peeled, roughly dice,
  • 1 cup Cauliflower florets,
  • 2 medium size Potatoes, peeled, diced,
  • 2 tbsp Butter, cubed,
  • 1 medium size Capsicum, roughly cut,
  • Salt to taste,
  • 1 ½ tsp Degi red chili powder,
  • A pinch of asafoetida,
  • 2-3 cups Water

For Tempering

  • 2-3 tbsp Butter, cubed,
  • 1 tbsp Oil,
  • 2 medium size Onions, finely chopped,
  • 2-3 Green chillies, chopped (less spicy)
  • ½ tbsp Ginger Garlic paste,
  • 3 medium size Tomatoes, finely chopped,
  • 1 medium size Capsicum, finely chopped,
  • 1 heaped tbsp Pav Bhaji Masala,
  • 1 ½ tsp Degi red chili powder,
  • Boiled & mashed vegetables,
  • 2 cups Water,
  • ½ tbsp Pav bhaji masala,
  • 2 tbsp Butter, cubed,
  • Salt to taste

For Assembling

  • 5-6 Bread slice
  • Prepared Pav Bhaji
  • Pizza cheese blend
  • ½ tbsp Coriander leaves
  • 2-3 tbsp Butter

For Garnish

  • Mayonnaise,
  • Onion, finely chopped,
  • Coriander leaves, finely chopped,
  • Tomato, finely chopped,
  • Prepared Pav Bhaji,
  • Lemon wedge,
  • Coriander sprig

Process

For Pav Bhaji

  1. In a pressure cooker, Add carrot, french beans, cauliflower, potatoes, butter and saute it well.
  2. Add degi red chili powder, pinch of asafoetida and saute it well.
  3. Now, add water and cover it with a lid and cook until 2 to 3 whistles.
  4. Once the vegetables are cooked well. Mash the vegetables with the help of a masher and keep it aside for further use.

For Tempering

  1. In a shallow pan, add butter, oil, onions and saute well.
  2. Add green chili, ginger garlic paste and saute it and add tomato, capsicum and saute it nicely.
  3. Add pav bhaji masala, degi red chili powder and saute for 10 seconds.
  4. Now, add prepared mashed vegetables, add pav bhaji masala, butter, salt to taste and mix well.
  5. Once the vegetables are cooked well. put it inside the bread slice, add cheese, coriander leaves and cover it with another slice of bread.
  6. Apply butter on the top of the bread and place the bread slice inside the waffle maker. Toast until its crisp and golden in color.
  7. Cut into half.

For Assembling

  1. Transfer it into a serving dish, garnish it with mayonnaise, onion rings, prepared bhaji, lemon wedge, onion, tomato and coriander sprig.
  2. Serve hot.
