This classic Southern dish of Shrimp and Grits is a delightful combination of savory shrimp, creamy grits, and smoky bacon. It's a versatile dish that can be enjoyed for breakfast, brunch, or dinner. Indulge in the rich flavors and comforting textures of this Southern favorite. Here's a recipe for Shrimp and Grits:
Ingredients:
- 1 pound medium shrimp, peeled and deveined
- Salt and pepper to taste
- 1 tablespoon Cajun seasoning (optional)
- 4 slices bacon, diced
- 1 small onion, finely chopped
- 1 bell pepper, finely chopped
- 2 cloves garlic, minced
- 1 cup chicken or vegetable broth
- 1 cup milk
- 1 cup water
- 1 cup stone-ground grits
- 1 cup shredded cheddar cheese
- 2 tablespoons butter
- Chopped green onions or parsley for garnish
Instructions:
- Season the shrimp with salt, pepper, and Cajun seasoning (if using). Set aside.
- In a large skillet, cook the diced bacon over medium heat until crispy. Remove the cooked bacon from the skillet and set aside, leaving the bacon drippings in the skillet.
- In the same skillet with the bacon drippings, add the chopped onion and bell pepper. Saute until they become tender and lightly golden, about 5 minutes.
- Add the minced garlic and cook for an additional minute until fragrant.
- Add the seasoned shrimp to the skillet and cook for about 2-3 minutes per side, or until they turn pink and opaque. Transfer the cooked shrimp to a plate and cover to keep them warm.
- In a saucepan, bring the chicken or vegetable broth, milk, and water to a boil.
- Slowly whisk in the stone-ground grits, reduce the heat to low, and cover the saucepan.
- Cook the grits for about 20-25 minutes, stirring occasionally, until they become thick and creamy.
- Stir in the shredded cheddar cheese and butter into the cooked grits until melted and well combined.
- Season the grits with salt and pepper to taste.
- To serve, divide the cheesy grits among serving bowls or plates.
- Top the grits with the cooked shrimp and sprinkle the crispy bacon over the shrimp.
- Garnish with chopped green onions or parsley for added freshness.
- Serve the Shrimp and Grits hot as a comforting and flavorful meal.
