Ingredients:

  • 1 pound medium shrimp, peeled and deveined
  • Salt and pepper to taste

  • 4 slices bacon, diced
  • 1 small onion, finely chopped
  • 1 bell pepper, finely chopped
  • 2 cloves garlic, minced
  • 1 cup chicken or vegetable broth
  • 1 cup milk
  • 1 cup water
  • 1 cup stone-ground grits
  • 1 cup shredded cheddar cheese
  • 2 tablespoons butter
  • Chopped green onions or parsley for garnish

Instructions:

  1. Season the shrimp with salt, pepper, and Cajun seasoning (if using). Set aside.
  2. In a large skillet, cook the diced bacon over medium heat until crispy. Remove the cooked bacon from the skillet and set aside, leaving the bacon drippings in the skillet.
  3. In the same skillet with the bacon drippings, add the chopped onion and bell pepper. Saute until they become tender and lightly golden, about 5 minutes.
  4. Add the minced garlic and cook for an additional minute until fragrant.
  5. Add the seasoned shrimp to the skillet and cook for about 2-3 minutes per side, or until they turn pink and opaque. Transfer the cooked shrimp to a plate and cover to keep them warm.

  7. Slowly whisk in the stone-ground grits, reduce the heat to low, and cover the saucepan.
  8. Cook the grits for about 20-25 minutes, stirring occasionally, until they become thick and creamy.
  9. Stir in the shredded cheddar cheese and butter into the cooked grits until melted and well combined.
  10. Season the grits with salt and pepper to taste.
  11. To serve, divide the cheesy grits among serving bowls or plates.
  12. Top the grits with the cooked shrimp and sprinkle the crispy bacon over the shrimp.
