Oreo Biscuit Cupcake
Oreo Biscuit Cupcakes are a delightful treat that combines the beloved flavors of Oreo cookies and cupcakes into a single dessert. These cupcakes feature an Oreo cookie base and a fluffy chocolate cupcake batter with crushed Oreo pieces mixed in.
Ingredients:
- 12 Oreo cookies
- 1 and 1/2 cups all-purpose flour
- 1/2 cup unsweetened cocoa powder
- 1 teaspoon baking powder
- 1/2 teaspoon baking soda
- 1/4 teaspoon salt
- 1 cup granulated sugar
- 1/2 cup vegetable oil
- 2 large eggs
- 1 teaspoon vanilla extract
- 1 cup buttermilk
- 1 cup crushed Oreo cookies (about 10-12 cookies)
For the Oreo Buttercream Frosting:
- 1 cup unsalted butter, softened
- 4 cups powdered sugar
- 1/4 cup milk
- 1 teaspoon vanilla extract
- 6-8 Oreo cookies, crushed (for decoration)
Instructions:
- Preheat your oven to 350°F (175°C) and line a muffin pan with cupcake liners.
- Place one Oreo cookie in the bottom of each liner.
- In a medium bowl, whisk together the flour, cocoa powder, baking powder, baking soda, and salt. Set aside.
- In a large mixing bowl, combine the granulated sugar and vegetable oil. Mix well until the sugar is fully incorporated into the oil.
- Add the eggs one at a time, mixing well after each addition. Stir in the vanilla extract.
- Gradually add the dry ingredients to the wet ingredients, alternating with the buttermilk. Begin and end with the dry ingredients. Mix until just combined, being careful not to overmix.
- Gently fold in the crushed Oreo cookies, distributing them evenly throughout the batter.
- Fill each cupcake liner about 3/4 full with the batter, covering the Oreo cookie at the bottom.
- Bake in the preheated oven for 18-20 minutes, or until a toothpick inserted into the center of a cupcake comes out clean.
- Remove the cupcakes from the oven and let them cool in the pan for a few minutes. Then transfer them to a wire rack to cool completely.
- While the cupcakes are cooling, prepare the Oreo Buttercream Frosting. In a large mixing bowl, beat the softened butter until creamy. Gradually add the powdered sugar, milk, and vanilla extract, and continue to beat until smooth and fluffy.
- Once the cupcakes are completely cooled, frost them with the Oreo Buttercream Frosting using a piping bag or a spatula.
- Decorate the cupcakes with the crushed Oreo cookies, sprinkling them on top of the frosting.
