Italian Beef Rice Pilaf
Italian Beef Rice Pilaf is a flavorful and satisfying dish that combines tender beef, aromatic herbs, and rice cooked in a savory broth.
Ingredients:
- 1 pound beef stew meat, cut into small pieces
- 1 tablespoon olive oil
- 1 small onion, finely chopped
- 2 cloves garlic, minced
- 1 cup long-grain rice
- 2 cups beef broth
- 1 can (14.5 ounces) diced tomatoes, drained
- 1 teaspoon dried Italian seasoning
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- Chopped fresh parsley for garnish (optional)
Instructions:
- Heat the olive oil in a large skillet or Dutch oven over medium heat.
- Add the beef stew meat to the skillet and cook until browned on all sides. Remove the beef from the skillet and set it aside.
- In the same skillet, add the chopped onion and minced garlic. Sauté until the onion becomes translucent and fragrant, about 2-3 minutes.
- Add the rice to the skillet and stir to coat it with the onion and garlic mixture.
- Pour in the beef broth, diced tomatoes, dried Italian seasoning, salt, and black pepper. Stir well to combine.
- Bring the mixture to a boil, then reduce the heat to low. Cover the skillet and simmer for about 15-20 minutes, or until the rice is cooked and the liquid is absorbed. Stir occasionally to prevent sticking.
- Once the rice is cooked, return the cooked beef to the skillet and stir it into the rice mixture.
- Cover the skillet again and let it sit for a few minutes to allow the flavors to meld together.
- Serve the Italian Beef Rice Pilaf hot, garnished with chopped fresh parsley if desired.
