Italian Beef Rice Pilaf

Italian Beef Rice Pilaf is a flavorful and satisfying dish that combines tender beef, aromatic herbs, and rice cooked in a savory broth.

Ingredients:

  • 1 pound beef stew meat, cut into small pieces
  • 1 tablespoon olive oil
  • 1 small onion, finely chopped
  • 2 cloves garlic, minced
  • 1 cup long-grain rice
  • 2 cups beef broth
  • 1 can (14.5 ounces) diced tomatoes, drained
  • 1 teaspoon dried Italian seasoning
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • Chopped fresh parsley for garnish (optional)

Instructions:

  1. Heat the olive oil in a large skillet or Dutch oven over medium heat.
  2. Add the beef stew meat to the skillet and cook until browned on all sides. Remove the beef from the skillet and set it aside.
  3. In the same skillet, add the chopped onion and minced garlic. Sauté until the onion becomes translucent and fragrant, about 2-3 minutes.
  4. Add the rice to the skillet and stir to coat it with the onion and garlic mixture.
  5. Pour in the beef broth, diced tomatoes, dried Italian seasoning, salt, and black pepper. Stir well to combine.
  6. Bring the mixture to a boil, then reduce the heat to low. Cover the skillet and simmer for about 15-20 minutes, or until the rice is cooked and the liquid is absorbed. Stir occasionally to prevent sticking.
  7. Once the rice is cooked, return the cooked beef to the skillet and stir it into the rice mixture.
  8. Cover the skillet again and let it sit for a few minutes to allow the flavors to meld together.
  9. Serve the Italian Beef Rice Pilaf hot, garnished with chopped fresh parsley if desired.
