Vegan Salted Egg Tofu
Vegan salted egg tofu is a flavorful and satisfying dish that replaces the traditional salted egg with a delicious vegan alternative.
Ingredients: For the tofu:
- 1 block of firm tofu, cut into cubes
- 2 tablespoons cornstarch or tapioca starch
- Vegetable oil, for frying
For the salted egg sauce:
- 1/4 cup vegan butter or margarine
- 4-6 salted vegan egg yolks (store-bought or homemade)
- 2 cloves garlic, minced
- 1 small red chili, thinly sliced (optional, for heat)
- 1 tablespoon nutritional yeast (optional, for added flavor)
- Salt and pepper, to taste
- Chopped spring onions, for garnish
Instructions:
- Prepare the tofu by draining it and pressing out any excess water. Cut the tofu into bite-sized cubes and set aside.
- In a shallow dish, coat the tofu cubes with cornstarch or tapioca starch, shaking off any excess.
- Heat vegetable oil in a frying pan or skillet over medium-high heat. Carefully add the coated tofu cubes and fry them until they turn golden brown and crispy on all sides. Remove the tofu from the oil and place them on a paper towel-lined plate to drain excess oil.
- In a separate pan, melt the vegan butter or margarine over medium heat. Add the minced garlic and sliced chili (if using) and sauté until fragrant.
- Add the salted vegan egg yolks to the pan and break them up with a spatula or fork, combining them with the butter and garlic mixture. Stir continuously until the salted egg yolks have melted and formed a creamy sauce.
- Add the nutritional yeast (if using) and season with salt and pepper to taste. Adjust the seasoning according to your preference.
- Return the crispy tofu cubes to the pan with the salted egg sauce. Gently toss the tofu in the sauce until they are evenly coated.
- Remove the pan from heat and transfer the salted egg tofu to a serving dish.
- Garnish the tofu with chopped spring onions for added freshness and color.
- Serve the vegan salted egg tofu hot as a main course or as part of a larger meal with rice or noodles.
