Vegan Coffee Jelly Dessert
Vegan coffee jelly dessert is a delicious and refreshing treat that combines the rich flavor of coffee with a gelatin-like texture. This recipe provides a vegan alternative to traditional coffee jelly, using plant-based ingredients.
Ingredients:
- 2 cups brewed coffee (strongly brewed)
- 1 tablespoon agar agar powder (or vegan gelatin substitute)
- 1/4 cup sugar (or sweetener of your choice)
- 1 cup coconut milk (or any other plant-based milk)
- 1 teaspoon vanilla extract
- Sweetener (such as agave syrup or maple syrup) to taste (optional)
- Vegan whipped cream or coconut cream (for serving, optional)
Instructions:
- In a saucepan, combine the brewed coffee and agar agar powder. Stir well to dissolve the agar agar powder.
- Place the saucepan over medium heat and bring the coffee mixture to a gentle boil.
- Add the sugar to the coffee mixture and stir until dissolved. Taste and adjust the sweetness if needed, adding sweetener of your choice.
- Reduce the heat to low and simmer the coffee mixture for 5 minutes, stirring occasionally.
- In a separate small saucepan, heat the coconut milk over low heat. Add the vanilla extract and stir well.
- Gradually pour the heated coconut milk into the coffee mixture while stirring. Continue to stir until well combined.
- Remove the saucepan from the heat and let the mixture cool for a few minutes.
- Pour the coffee mixture into a square or rectangular dish or individual serving glasses. Allow it to cool to room temperature.
- Once the mixture has cooled, place it in the refrigerator to set. This will take approximately 2-4 hours, depending on the thickness of the jelly desired.
- Once the coffee jelly has set, cut it into small cubes or your desired shape.
- Serve the vegan coffee jelly cubes chilled, either on their own or with a dollop of vegan whipped cream or coconut cream on top.
