  • 2 cups brewed coffee (strongly brewed)

  • 1 cup coconut milk (or any other plant-based milk)
  • 1 teaspoon vanilla extract
  • Sweetener (such as agave syrup or maple syrup) to taste (optional)
  • Vegan whipped cream or coconut cream (for serving, optional)

Instructions:

  1. In a saucepan, combine the brewed coffee and agar agar powder. Stir well to dissolve the agar agar powder.
  2. Place the saucepan over medium heat and bring the coffee mixture to a gentle boil.
  3. Add the sugar to the coffee mixture and stir until dissolved. Taste and adjust the sweetness if needed, adding sweetener of your choice.
  4. Reduce the heat to low and simmer the coffee mixture for 5 minutes, stirring occasionally.
  5. In a separate small saucepan, heat the coconut milk over low heat. Add the vanilla extract and stir well.
  6. Gradually pour the heated coconut milk into the coffee mixture while stirring. Continue to stir until well combined.
  7. Remove the saucepan from the heat and let the mixture cool for a few minutes.
  8. Pour the coffee mixture into a square or rectangular dish or individual serving glasses. Allow it to cool to room temperature.
  9. Once the mixture has cooled, place it in the refrigerator to set. This will take approximately 2-4 hours, depending on the thickness of the jelly desired.
  10. Once the coffee jelly has set, cut it into small cubes or your desired shape.
  11. Serve the vegan coffee jelly cubes chilled, either on their own or with a dollop of vegan whipped cream or coconut cream on top.
