Ingredients

  • LADY FINGER | рднрд┐рдВрдбреА 250 GRAMS
  • POTATO | рдЖрд▓реВ 1 NO.
  • WATER | рдкрд╛рдиреА AS REQUIRED
  • ONION | рдкреНрдпрд╛рдЬрд╝ 2 SMALL SIZED.
  • MUSTARD OIL | рд╕рд░рд╕реЛрдВ рдХрд╛ рддреЗрд▓ 2 TBSP
  • CUMIN SEEDS | рдЬреАрд░рд╛ ┬╜ TSP
  • GARLIC | рд▓реЗрд╣рд╕реБрди 1 TBSP (ROUGHLY CHOPPED)
  • GREEN CHILLI | рд╣рд░реА рдорд┐рд░реНрдЪ 2 NO. (CHOPPED)
  • ASAFOETIDA | рд╣реАрдВрдЧ ┬╝ TSP
  • POWDERED SPICES
  • TURMERIC POWDER | рд╣рд▓реНрджреА рдкрд╛рдЙрдбрд░ ┬╝ TSP
  • CORIANDER POWDER | рдзрдирд┐рдпрд╛ рдкрд╛рдЙрдбрд░ 1 TSP
  • KASHMIRI RED CHILLI POWDER | рдХрд╢реНрдореАрд░реА рд▓рд╛рд▓ рдорд┐рд░реНрдЪ рдкрд╛рдЙрдбрд░ 1/2TSP
  • CUMIN POWDER | рдЬреАрд░рд╛ рдкрд╛рдЙрдбрд░ 1 TSP
  • DRY MANGO POWDER | рдЖрдордЪреВрд░ рдкрд╛рдЙрдбрд░ 1 TSP
  • KASURI METHI | рдХрд╕реВрд░реА рдореЗрдереА 1 TSP
  • SALT | рдирдордХ TO TASTE
  • GARAM MASALA | рдЧрд░рдо рдорд╕рд╛рд▓рд╛ A PINCH
  • FRESH CORIANDER | рд╣рд░рд╛ рдзрдирд┐рдпрд╛ A HANDFUL (CHOPPED)

Method:

  1. Wash the lady fingers & dry them using a clean kitchen towel, place them onto a plate & let them dry under the fan for 5-10 minutes.
  2. Once dried, cut them into thick dices & transfer them into a bowl.
  3. Similar cut the potato into the same sized dices & place them in water so that they donтАЩt discolour.
  4. Then cut the onions into thick slices & transfer them into a bowl as well.
  5. Set a kadhai over high flame & add the oil once it gets hot, now heat the oil until it reaches itтАЩs smoking point then lower the flame & let it cool down slightly.
  6. Further add the cumin seeds, garlic, green chillies & asafoetida, stir well & cook the garlic over medium low flame for 1-2 minutes.
  7. Then add the slices onions & cook over high flame until the onions turn translucent.
  8. Further add the potatoes & cook over high flame for 2-3 minutes, then cover it with a lid & cook over low flame for 4-5 minutes until the potatoes are almost cooked.
  9. Once the potatoes are almost cooked add all the powdered spices, kasuri methi, stir well & cook over low flame for 1-1.5 minutes.
  10. Further add the lady fingers, stir well & then cover & cook over medium low flame until the lady fingers get cooked.
  11. Lastly taste & adjust the salt if required & add garam masala & fresh coriander.
  12. Your chatpata bhindi aloo is ready.
