Ingredients:

  • 1 cup quinoa, rinsed
  • 2 cups milk (dairy or non-dairy)
  • 1/4 cup maple syrup or honey
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon ground cinnamon
  • 1/4 teaspoon ground nutmeg
  • Pinch of salt
  • Optional Toppings: fresh fruits, nuts, or a sprinkle of cinnamon

Instructions:

  1. Rinse Quinoa:
    • Rinse the quinoa under cold water to remove any bitterness.
  2. Cook Quinoa:
    • In a medium-sized saucepan, combine the rinsed quinoa and milk. Bring it to a boil, then reduce the heat to low, cover, and simmer for about 15-20 minutes or until the quinoa is cooked and most of the liquid is absorbed.
  3. Sweeten and Flavor:
    • Stir in the maple syrup (or honey), vanilla extract, ground cinnamon, ground nutmeg, and a pinch of salt. Continue to simmer for an additional 5-10 minutes, stirring occasionally, until the mixture thickens.
  4. Cool:
    • Remove the quinoa pudding from the heat and let it cool for a few minutes.
  5. Serve:
    • Serve the quinoa pudding warm or chilled.
  6. Add Toppings:
    • Top with fresh fruits, nuts, or a sprinkle of cinnamon just before serving.
  7. Store:
    • Store any leftovers in an airtight container in the refrigerator.
