Quinoa Pudding
Quinoa for dessert? If you like rice pudding, then give this quinoa pudding version a try; it's super sweet and easy to make and another great way to include healthy quinoa in your diet.
Ingredients:
- 1 cup quinoa, rinsed
- 2 cups milk (dairy or non-dairy)
- 1/4 cup maple syrup or honey
- 1 teaspoon vanilla extract
- 1/2 teaspoon ground cinnamon
- 1/4 teaspoon ground nutmeg
- Pinch of salt
- Optional Toppings: fresh fruits, nuts, or a sprinkle of cinnamon
Instructions:
- Rinse Quinoa:
- Rinse the quinoa under cold water to remove any bitterness.
- Cook Quinoa:
- In a medium-sized saucepan, combine the rinsed quinoa and milk. Bring it to a boil, then reduce the heat to low, cover, and simmer for about 15-20 minutes or until the quinoa is cooked and most of the liquid is absorbed.
- Sweeten and Flavor:
- Stir in the maple syrup (or honey), vanilla extract, ground cinnamon, ground nutmeg, and a pinch of salt. Continue to simmer for an additional 5-10 minutes, stirring occasionally, until the mixture thickens.
- Cool:
- Remove the quinoa pudding from the heat and let it cool for a few minutes.
- Serve:
- Serve the quinoa pudding warm or chilled.
- Add Toppings:
- Top with fresh fruits, nuts, or a sprinkle of cinnamon just before serving.
- Store:
- Store any leftovers in an airtight container in the refrigerator.
