This Shaved Brussels Sprout Salad is a delightful mix of textures and flavors, making it a perfect side dish for any meal. Adjust the ingredients and quantities according to your preferences.
Ingredients:
For the Salad:
- 1 lb Brussels sprouts, trimmed and thinly sliced
- 1/2 cup thinly sliced red onion
- 1/2 cup sliced almonds, toasted
- 1/2 cup dried cranberries or pomegranate seeds for sweetness
- 1/2 cup crumbled feta or goat cheese
- Optional: Sliced apple or pear for added freshness
For the Dressing:
- 3 tablespoons extra-virgin olive oil
- 2 tablespoons apple cider vinegar
- 1 tablespoon Dijon mustard
- 1 tablespoon honey
- Salt and pepper to taste
Instructions:
- Prepare Brussels Sprouts:
- Trim the ends of the Brussels sprouts and remove any outer leaves. Slice them thinly using a sharp knife or a mandoline.
- Toast Almonds:
