Creamy Corn Dip

Ingredients:
- 2 cups frozen corn kernels, thawed
- 1 can (10 oz) diced tomatoes with green chilies, drained
- 1 cup shredded cheddar cheese
- 1 cup mayonnaise
- 1/2 cup sour cream
- 1/4 cup chopped green onions
- 1/4 cup chopped fresh cilantro
- 1 teaspoon ground cumin
- 1 teaspoon chili powder
- 1/2 teaspoon garlic powder
- Salt and pepper to taste
- Tortilla chips or sliced baguette for serving
Instructions:
- Preheat Oven:
- Preheat your oven to 350°F (175°C).
- Mix Ingredients:
- In a large mixing bowl, combine the thawed corn, drained diced tomatoes with green chilies, shredded cheddar cheese, mayonnaise, sour cream, chopped green onions, chopped cilantro, ground cumin, chili powder, garlic powder, salt, and pepper. Mix until well combined.
- Transfer to Baking Dish:
- Transfer the mixture to a baking dish, spreading it out evenly.
- Bake:
- Bake in the preheated oven for about 25-30 minutes or until the dip is hot and bubbly, and the edges are lightly golden.
- Garnish:
- Garnish with additional chopped green onions and cilantro if desired.
- Serve:
- Serve the creamy corn dip warm with tortilla chips or sliced baguette for dipping.
