Achari Gosht Curry
Ingredients:
- 500g lamb or mutton, cut into pieces
- 3 tablespoons oil or ghee
- 1 large onion, finely sliced
- 2 tomatoes, chopped
- 1 tablespoon ginger-garlic paste
- 2 tablespoons achar (pickle) masala
- 1 teaspoon fennel seeds
- 1 teaspoon mustard seeds
- 1 teaspoon cumin seeds
- 1/2 teaspoon fenugreek seeds
- 1 teaspoon turmeric powder
- 1 teaspoon red chili powder
- 1/2 teaspoon garam masala
- Salt to taste
- Fresh coriander for garnish
Cooking Steps:
- In a pan, heat oil or ghee. Add fennel seeds, mustard seeds, cumin seeds, and fenugreek seeds. Let them splutter.
- Add sliced onions and sauté until golden brown.
- Add ginger-garlic paste and cook until the raw smell disappears.
- Stir in achar masala, turmeric powder, red chili powder, and salt. Cook for a couple of minutes.
- Add chopped tomatoes and cook until they become soft and the oil separates.
- Add the meat pieces and brown them on all sides.
- Pour in enough water to cover the meat, cover, and simmer until the meat is tender.
- Once the meat is cooked, uncover and let the curry thicken.
- Sprinkle garam masala and garnish with fresh coriander.
Serve the Achari Gosht Curry hot with naan or rice, savoring the robust flavors of pickle-infused spices and tender meat.
