Achari Gosht Curry

Ingredients:

  1. 500g lamb or mutton, cut into pieces
  2. 3 tablespoons oil or ghee
  3. 1 large onion, finely sliced
  4. 2 tomatoes, chopped
  5. 1 tablespoon ginger-garlic paste
  6. 2 tablespoons achar (pickle) masala
  7. 1 teaspoon fennel seeds
  8. 1 teaspoon mustard seeds
  9. 1 teaspoon cumin seeds
  10. 1/2 teaspoon fenugreek seeds
  11. 1 teaspoon turmeric powder
  12. 1 teaspoon red chili powder
  13. 1/2 teaspoon garam masala
  14. Salt to taste
  15. Fresh coriander for garnish

Cooking Steps:

  1. In a pan, heat oil or ghee. Add fennel seeds, mustard seeds, cumin seeds, and fenugreek seeds. Let them splutter.
  2. Add sliced onions and sauté until golden brown.
  3. Add ginger-garlic paste and cook until the raw smell disappears.
  4. Stir in achar masala, turmeric powder, red chili powder, and salt. Cook for a couple of minutes.
  5. Add chopped tomatoes and cook until they become soft and the oil separates.
  6. Add the meat pieces and brown them on all sides.
  7. Pour in enough water to cover the meat, cover, and simmer until the meat is tender.
  8. Once the meat is cooked, uncover and let the curry thicken.
  9. Sprinkle garam masala and garnish with fresh coriander.

Serve the Achari Gosht Curry hot with naan or rice, savoring the robust flavors of pickle-infused spices and tender meat.
