Perfect Kadhai Paneer
Ingredients:
- Paneer (Indian cottage cheese) - 250g, cubed
- Bell peppers (Capsicum) - 1 large, thinly sliced
- Tomatoes - 2 medium, finely chopped
- Onions - 2 medium, finely sliced
- Green chilies - 2, finely chopped
- Ginger-garlic paste - 1 tablespoon
- Coriander powder - 1 teaspoon
- Cumin powder - 1/2 teaspoon
- Garam masala - 1/2 teaspoon
- Red chili powder - 1 teaspoon (adjust per spice preference)
- Turmeric powder - 1/2 teaspoon
- Kasuri methi (dried fenugreek leaves) - 1 teaspoon
- Fresh coriander leaves - for garnish
- Cooking oil - 2 tablespoons
- Salt - to taste
- Calories (per serving): ~300 kcal
Steps:
Step 1: Prepare the Kadhai Paneer Masala Base
- Heat oil in a Kadhai or wok. Add sliced onions and sauté until golden brown.
- Add ginger-garlic paste and green chilies. Sauté until the raw aroma disappears.
- Toss in finely chopped tomatoes and cook until they turn soft and oil starts to separate.
Step 2: Spice it Up
- Add coriander powder, cumin powder, red chili powder, turmeric powder, and salt. Mix well and cook for a couple of minutes.
Step 3: Introduce Paneer and Veggies
- Add cubed paneer and thinly sliced bell peppers. Mix gently to coat the paneer and veggies with the masala.
Step 4: Elevate with Garam Masala and Kasuri Methi
- Sprinkle garam masala and crush kasuri methi between your palms to release its flavor. Add them to the Kadhai Paneer. Stir well.
Step 5: Garnish and Serve
- Garnish with fresh coriander leaves and give it a final stir.
- Serve hot with naan or roti, and enjoy the tantalizing flavors of Kadhai Paneer.
