Ingredients:

  • Paneer (Indian cottage cheese) - 250g, cubed
  • Bell peppers (Capsicum) - 1 large, thinly sliced
  • Tomatoes - 2 medium, finely chopped
  • Onions - 2 medium, finely sliced
  • Green chilies - 2, finely chopped
  • Ginger-garlic paste - 1 tablespoon
  • Coriander powder - 1 teaspoon
  • Cumin powder - 1/2 teaspoon
  • Garam masala - 1/2 teaspoon
  • Red chili powder - 1 teaspoon (adjust per spice preference)
  • Turmeric powder - 1/2 teaspoon
  • Kasuri methi (dried fenugreek leaves) - 1 teaspoon
  • Fresh coriander leaves - for garnish
  • Cooking oil - 2 tablespoons
  • Salt - to taste

Steps:

Step 1: Prepare the Kadhai Paneer Masala Base

  • Heat oil in a Kadhai or wok. Add sliced onions and sauté until golden brown.
  • Add ginger-garlic paste and green chilies. Sauté until the raw aroma disappears.
  • Toss in finely chopped tomatoes and cook until they turn soft and oil starts to separate.

Step 2: Spice it Up

  • Add coriander powder, cumin powder, red chili powder, turmeric powder, and salt. Mix well and cook for a couple of minutes.

Step 3: Introduce Paneer and Veggies

  • Add cubed paneer and thinly sliced bell peppers. Mix gently to coat the paneer and veggies with the masala.

Step 4: Elevate with Garam Masala and Kasuri Methi

  • Sprinkle garam masala and crush kasuri methi between your palms to release its flavor. Add them to the Kadhai Paneer. Stir well.

Step 5: Garnish and Serve

  • Garnish with fresh coriander leaves and give it a final stir.
  • Serve hot with naan or roti, and enjoy the tantalizing flavors of Kadhai Paneer.
