Crispy Salmon with Roasted Fennel

Ingredients:
- 4 salmon fillets
- 2 fennel bulbs, thinly sliced
- 2 tablespoons olive oil
- 1 lemon, sliced
- 2 cloves garlic, minced
- 1 teaspoon dried thyme
- Salt and black pepper to taste
- Fresh dill for garnish
Cooking Steps:
- Preheat the oven to 400°F (200°C).
- Place the sliced fennel on a baking sheet. Drizzle with olive oil, add minced garlic, and sprinkle with salt, pepper, and dried thyme. Toss to coat evenly.
- Roast the fennel in the preheated oven for 20-25 minutes or until golden brown and tender, stirring occasionally.
- While the fennel is roasting, season the salmon fillets with salt and black pepper.
- Heat olive oil in a skillet over medium-high heat. Add the salmon fillets, skin side down, and cook until the skin is crispy and the salmon is cooked through, about 3-4 minutes per side.
- In the last minute of cooking, add lemon slices to the skillet, allowing them to caramelize slightly.
- Serve the Crispy Salmon over a bed of roasted fennel, garnished with fresh dill.
- Optionally, squeeze the caramelized lemon slices over the salmon before serving for an extra burst of citrus flavor.
