Homemade Indori Poha

Ingredients:

  • 2 cups thick poha (flattened rice)
  • 1 large potato, peeled and diced
  • 1/2 cup peanuts
  • 1/2 cup chopped onions
  • 1/4 cup chopped green chilies (adjust to taste)
  • 1/4 cup fresh coriander leaves, chopped
  • 1 teaspoon mustard seeds
  • 1 teaspoon cumin seeds
  • 1/2 teaspoon turmeric powder
  • 1/2 teaspoon red chili powder (adjust to taste)
  • Salt to taste
  • 2 tablespoons cooking oil
  • 1 lemon, sliced for garnish
  • Sev (thin gram flour noodles) for topping

Steps:

  1. Rinse the poha in water, drain, and set aside to let it soften.
  2. In a pan, heat oil over medium heat. Add mustard seeds and cumin seeds. Let them splutter.
  3. Add diced potatoes and peanuts to the pan. Cook until the potatoes are tender and the peanuts are roasted.
  4. Stir in chopped onions and cook until they become translucent.
  5. Add chopped green chilies, turmeric powder, red chili powder, and salt. Mix well.
  6. Add the softened poha to the pan. Gently mix to coat the poha with the spices.
  7. Cover the pan and let it cook on low heat for a few minutes, allowing the flavors to meld.
  8. Garnish the Indori Poha with fresh coriander leaves.
  9. Serve hot, topped with sev and a slice of lemon on the side.
