Delicious Blueberry Cheesecake
Ingredients:
For the Crust:
- 1 1/2 cups graham cracker crumbs
- 1/4 cup melted butter
- 2 tablespoons sugar
For the Cheesecake Filling:
- 4 packages (32 oz total) cream cheese, softened
- 1 1/2 cups granulated sugar
- 4 large eggs
- 1 teaspoon vanilla extract
For the Blueberry Topping:
- 2 cups fresh or frozen blueberries
- 1/2 cup sugar
- 2 tablespoons cornstarch
- 1/4 cup water
- 1 tablespoon lemon juice
Cooking Steps:
Step 1: Preheat the oven to 325°F (163°C). Grease a springform pan.
Step 2: In a bowl, combine graham cracker crumbs, melted butter, and sugar. Press the mixture into the bottom of the prepared pan to form the crust.
Step 3: In a large mixing bowl, beat the cream cheese and sugar until smooth.
Step 4: Add eggs one at a time, beating well after each addition. Mix in vanilla extract.
Step 5: Pour the cream cheese mixture over the crust in the pan.
Step 6: Bake in the preheated oven for about 50-60 minutes or until the center is set and the top is lightly browned.
Step 7: While the cheesecake is baking, prepare the blueberry topping. In a saucepan, combine blueberries, sugar, cornstarch, water, and lemon juice. Cook over medium heat until the mixture thickens, stirring occasionally.
Step 8: Allow the cheesecake to cool completely before spreading the blueberry topping over the surface.
Step 9: Refrigerate the cheesecake for at least 4 hours or overnight before serving.
